An HPLC-RID analytical method was shown to be able to separate and quantify the sugar compounds of fructose, glucose and sucrose without derivatization and in less than 30 min. The regression equations all revealed strong linearity (R2 = 0.9996–0.9999) in the test range. The LOD and LOQ calculated for the three analytes were low, ranging between 0.017 and 0.059 and 0.004 and 0.197 mg/mL, respectively. Therefore, the HPLC-RID method was simple, accurate, precise and specific and had the ability to simultaneously quantitatively evaluate fructose, glucose and sucrose in fruit juices. The analysis was carried out on a Phenomenex Luna Omega 100Ao sugar column (150mm x 4.60mm, 3 microns) with Phenomenex KJO-4282 pre-column (AJO-4495 cartridge) and isocratic elution of acetonitrile: water (75:25). , v/v). The analysis results of the fruit juice samples were in good agreement with those declared by the manufacturers. Although the sugar levels in the juices were of the same order of magnitude as those declared on the packaging by the manufacturers, the relative standard deviations of these readings (0.1%, 0.6% and 0.04% for fructose, glucose and sucrose) had no common measure with the relative errors of the total contents compared to those declared on the packaging (12.57%, 3.13% and 7.92% for apple juice, melon and banana/strawberry respectively) – errors which could not be negative under penalty of criminal prosecution by federal laws and regulations. The results showed that the content of the three sugars varied according to the juices (Table 11). While fructose (41% to 60%) and glucose (25% to 39%) appeared as common and majority sugars in the three juices, sucrose (13% to 20%) was only greater than 15%. only in juice and banana and strawberry. With a TR slightly higher than that of sucrose, it would have been interesting to extend the experiment to maltose, which is present in various fashionable sodas. The results demonstrated very good repeatability in terms of retention time, as well as excellent linearity over the concentration range tested.
