Abstract
Greer, ieaty vegetables are herbaceous plants with different shapes which contain essential nutrients for growth and maintenance of the body. The study was conducted to identify the nutrient compositions of the some leafy vegetables; Ayoyo (Corchorus olitorius L. /, Bra (.Hibiscus sabdariffa L. var. sabdariffa), Cassava (Manihot esculenta Crantz) leaves, Cowpea (Ugna unguiculaiaj leaves, Bitter leaf (Vernonia amygdalina Del) and Pumpkin (Cucurbita maxima Duch. ex Lam. leaves which are among the indigenous green leafy vegetables commonly grown and consumed in the three northern regions of Ghana. Samples were taken at two andfour weeks after germination. The results ofthe samples showed appreciable levels of moisture, orotein, fat,fibre and ash. There were however, nutrient variations at the different stages at which samples were taken.
