Evaluation of the Effect of different microwave dryer power on the Qualitative and Quantitative properties of Essential oil of Bakhtiari Savory (original) (raw)
Drying is one of the most important post-harvest stages of medical plants which has a significant effect on the quality and quantity of the effective compounds. In order to promote the objectives of the study, microwave power was selected as an independent variable so that power variable microwave was designed and constructed. After collection and drying the savory samples in the shade, the essential oil at different treatments was extracted in three levels of 400, 600 and 800 W. The volatile oil was analyzed using GC/MS method. Results of experiments showed that increase in the power from 400 W to 600 and 800 W caused a reduction in drying time. The most yield of essential oil was obtained in the shade drying method with the essence value of 2.41%. It was also revealed that with increasing the microwave power, the amount of essence decreased, so that the microwave power of 800 W had the lowest essence value. The aim of this study were evaluation the effects of adding satureja khosestanica essential oil (EO) at concentrations of 200, 400 and 600 ppm on bactericidal, chemical and sensory properties of frankfurter sausages formulated with different sodium nitrite (NaNO 2) levels (0, 250, 500) and in combination of savory essential oil and sodium nitrite (300:250, 200:250) that were stored at 4℃ for 20 days. Among different concentrations of savory essential oil, 200 ppm concentration has similar effect as nitrite 500 ppm on lipid oxidation. Reduced value of Thiobarbituric acid reactive substance (TBARS) (p<0.05) was observed in frankfurter sausages with the lowest concentration of savory without added sodium nitrite. Among savory concentration tested none of them has considerable effect on formation red color. Nevertheless sodium nitrite and savory essential oil at concentrations (300-200) ppm increased L * , a * values significantly (p<0.05). The effect of savory essential oil was added individually or in combination with sodium nitrite on microbiological tests (Total Viable Counts, Lactic acid bacteria, Entrobacteriaceae, yeast and molds) were showed that savory essential oil has greater antimicrobial power against G + microorganism than the other kinds of microorganism such as Entrobacteriacea, molds and yeasts.

پودر شیر پس¬چرخ بهعلت داشتن خواص عملکردی مناسبی نظیر امولسیونکنندگی، جذب آب، ایجاد ویسکوزیته و ژلدهی بهعنوان یک ترکیب ارزشمند در فراورده¬های پختی که نیاز به بافت مناسب و رطوبت مطلوب دارند، مورداستفاده قرار می¬گیرد. هدف از این پژوهش بهبود خواص بیاتی و کیفی کیک روغنی(یزدی) و خمیر آن با افزودن شیرخشک پسچرخ در دو سطح 25 و 50 درصد بوده است. ویژگی¬های خمیر شامل حجم مخصوص و قوام خمیر و ویژگی¬های کیک شامل حجم مخصوص، اندیس¬های حجم، تقارن و یکنواختی، نسبت پوسته به مغز، آون اسپرینگ، تخلخل و بافت در ساعات اولیه پخت اندازهگیری شدند. نتایج بدست آمده نشان داد که با افزایش پودر شیر پس¬چرخ تمامی ویژگی¬های خمیر و کیک بهبود یافتند بهطوری که در تیمار 50% بیشترین قوام خمیر(73/8 گرم بر ثانیه)، حجم مخصوص کیک، آون اسپرینگ(3/3 سانتیمتر)، اندیس¬های حجم، تقارن و یکنواختی و نسبت پوسته به مغز(22/0) وکمترین حجم مخصوص خمیر و بهترین حالت بافت یعنی کمترین سفتی (109 گرم)، چسبندگی، صمغیت(1017 گرم) و قابلیت جویدن (48/71 میلیژول) و بیشترین انسجام، برگشت¬پذیری، فنریت(26/7 میلیمتر) و تردی بدست آمد.
بررسی کمی و کیفی اسانس گیاه مورخوش (Zhumeria majdae) در رویشگاه طبیعی و شرایط مزرعه

مورخوش گونه اندمیک و انحصاری استان هرمزگان است که از زمان های قدیم به صورت سنتی در درمان ناراحتی هایی چون اسهال، نفخ، دل درد، ترشی و سوزش معده، سردرد، سرماخوردگی، التیام زخم و بعنوان خنکی مصرف می شود. به منظور بررسی تغییرات کمی و کیفی اسانس گونه Z. majdae در مزرعه و رویشگاه، این گونه در دو منطقه حاجی آباد و سرچاهان استان هرمزگان کاشته شد. در سال سوم سرشاخه های گلدار گیاه از مزارع حاجی آباد و سرچاهان و همزمان از ارتفاعات850 متر رشته کوه گنو جمع آوری شدند. تجزیه و شناسایی ترکیبهای تشکیل دهنده اسانس گیاهان مربوط به رویشگاه و دو منطقه کشت به وسیله دستگاه های GC و GC/MS صورت پذیرفت. تعداد ترکیب های در مزارع حاجی اباد، سرچاهان و رویشگاه کوه گنو به ترتیب 17، 22 و 14 بود. لینالول (1/55 %)، کامفور (2/26 %)، لیمونن (4/3 %)، کامفن (6/2 %) و برنئول (7/1%) عمده ترین ترکیب های موجود در Z. majdae در رویشگاه بودند. لینالول (4/60%)، کامفور (5/26%)، ژرانیول (1/2%)، برنئول (1/2%) و لیمونن (3/1%) عمده ترین ترکیب های موجود در Z. majdae در مزرعه سرچاهان بودند. لینالول (59%)، کامفور (7/23%)، لیمونن (5/4%)...
Research on Animal Production
In this study, the effect of different levels of Scrophularia striata extract on the parameters of laboratory gas production, the concentration of volatile fatty acids and the activity of hydrolytic enzymes on the contents of the cecum of adult male rabbits were investigated. For this purpose, 20 New Zealand rabbits weighing approximately 1.6 ± 0.2 kg (5 months and up) were used in a completely randomized design with four treatments and five replications. Treatments included 1) without receiving Scrophularia striata extract (control), and supplementing the control diet with levels of 2) 200, 3) 300 and 4) 400 mg of Scrophularia striata extract per kg of body weight. The control group received 2 ml of water instead of the extract. At the end of the experimental period and after slaughter of rabbits, the contents of their cecum were sampled and the parameters of gas production, concentration of volatile fatty acids and activity of hydrolytic enzymes of cecal sample were determined. The results showed that consumption of Scrophularia striata extract reduced the volume of gas produced (p<0.05) and the total amount of volatile fatty acids (p= 0.01). Consumption of Scrophularia striata extract increased the activity of alpha-amylase (p= 0.02) and microcrystalline cellulase (p= 0.01) linearly, but did not significant e ffect on carboxymethylcellulose and filter paper decomposition activity. In general, the extract of the Scrophularia striata was able to affect the microbial and enzymatic activities of the rabbit colon, so that the microbial activity decreased with the consumption of this plant and eventually led to less gas production and reduced production of volatile fatty acids.
