Anthocyanins are high-value compounds, and their use as functional foods and their natural colorant have potential health benefits. Anthocyanins seem to possess antioxidant properties, which help prevent neuronal diseases and thereby exhibit anti-inflammatory, chemotherapeutic, cardioprotective, hepatoprotective, and neuroprotective activities. They also show different therapeutic effects against various chronic diseases. Anthocyanins are present in high concentrations in onion. The objective of this study was to encapsulate anthocyanins from red onion skins into different biopolymeric matrices as a way to develop powders with multifunctional activities. Two different variants of powders were obtained using a combination of gelation and freeze-drying techniques and characterized by encapsulation efficiency, antioxidant activity, phytochemical content, and color. Stability during storage and the bioavailability of anthocyanins in the in vitro simulated digestion were also examined. Powder V2, with a higher concentration of polysaccharides than V1, allowed a better encapsulation efficiency (90.53 ± 0.29%) and good stability during storage. Both variants had a high content of phytochemicals and antioxidant activity. In vitro investigations proved that an increased polysaccharides concentration offers the best protection for anthocyanins. Antioxidative phenolic constituents of skins of onion varieties and their activities

The antioxidant activity of phenolic constituent of skin and selected flesh of different coloured onions (Pearl, Red, Yellow and White) were determined. The green shoot obtained after sprouting of the red onion was also analyzed to study the changes in the phenolic constituents during germination. For the first time, all tests were carried out separately for the free, esterified and insoluble-bound phenolic constituents of onion samples. The content of phenolics extracted from onion skins was approximately six times higher than that of their flesh counterparts. Among onion varieties, pearl onion skin showed the highest phenolic content (26.4 mg quercetin eq/g freeze dried sample). A similar trend was observed for free radical scavenging activity of the tested samples. Extracts from edible part of onion showed lower activity in all antioxidant tests carried out. The HPLC-MS analysis showed that quercetin 3,4 0-diglucoside, quercetin, and kaempferol were the predominant phenolics in all onion extracts tested.

This study aimed to investigate the thermal stability and biological activities of the phytochemicals from the red onion skins extract, which are a rich source of anthocyanins. Eight anthocyanins were identified in the extract by high-performance liquid chromatography, the most abundant ones being cyanidin 3-O-laminaribioside and cyanidin 3-O-(6″-malonoyl-laminaribioside). The study also involved the assessment of the thermal degradation kinetics of anthocyanins and antioxidant activity in the 75–155 °C temperature range. The thermal degradation kinetics was described using the first-order kinetics model. In terms of thermal stability, increasing the temperature resulted in lower half-life values (t1/2) and higher degradation rate constant values (k) for both anthocyanins and antioxidant activity. Anthocyanin antioxidants from edible fruits

The edible fruits of 12 plants were extracted in methanol and subjected to solvent-solvent partitioning to yield three fractions, hexane, ethyl acetate, and aqueous. The semi-purified aqueous fractions were separated over Diaion HP-20SS resin to remove sugars and ascorbic acid. These fractions were then screened for antioxidant activity using the 1,1-diphenyl-2-picrylhydrazyl assay. Nine of the semi-purified fractions exhibited high antioxidant capacity. Cyanidin-3-O-b-glucopyranoside, an anthocyanin antioxidant, was identified from semi-purified aqueous fractions of the tropical fruit star apple (Chrysophyllum cainito), Surinam cherry (Eugenia uniflora), and jaboticaba (Myrciaria cauliflora). Delphinidin-3-O-b-glucopyranoside was identified from E. uniflora.
Anthocyanins with 4′-glucosidation from red onion, Allium cepa

have been isolated in minor amounts from pigmented scales of red onion, Allium cepa, in addition to six known anthocyanins. The structures were established mainly by extensive use of 2D NMR spectroscopy and electrospray LC-MS. With exception of cyanidin 4 0 -glucoside and cyanidin 3,4 0 -diglucoside reported from Hibiscus esculentus with inadequate documentation, this is the first identification of anthocyanins with 4 0 -glycosidation. Compared to cyanidin 3-glycosides the cyanidin 4 0 -glucoside derivatives showed hypsochromic shifts of visible l max and hyperchromic effects on wavelengths around 440 nm, similar to pelargonidin 3-glycosides. #

Objective: Anthocyanins are the water-soluble pigments most commonly present in flowers, fruits, and vegetables. Anthocyanins are used for food coloring due their low toxicity and health benefits. They are extracted from different sources, but black carrot has higher anthocyanin content compared with common fruits and vegetables. Here, we study alcoholic anthocyanin extracts from black carrot to enhance their stability. The objective of our research is to determine if microencapsulation with tetraethyl orthosilicate (TEOS) is a feasible option for preventing black carrot anthocyanin degradation. Extraction solvents were solutions of (1) ethanol/acetic acid and (2) ethanol/citric acid. Samples were purified through a resin column and microencapsulated using TEOS.
