ABSTRAK Pemanfaatan liquid smoke sebagai bahan alternatif pembuatan ikan asap sudah saatnya diterapkan di Indnesia. Salah satu jenis ikan yang berpotensi adalah ikan manyung (Arius thalasinus) karena rasanya yang khas, lezat, gurih, dan bergizi. Ikan direndam dalam air yang ditambah liquid smoke dengan konsentrasi 5% (A), 7,5% (B), dan 10% (C) selama 30 menit. Hasil penelitian nilai rata-rata organoleptik produk untuk semua perlakuan termasuk tinggi dan tidak menunjukkan perbedaan yang nyata, yaitu A=8,32; B=8,36; dan C=8,31. Sedangkan nilai batas penerimaan SNI = 7. Komposisi kimia produk tidak menunjukkan perbedaan yang berarti, dimana kadar air berkisar 55-59%, kadar protein 30-50%, kadar lemak 4,95%-7,64% dan kadar abu 3,38%-4,95%. Hasil uji jumlah total mikroba menunjukkan A=15,7.10 2 CFU/gr, B= 11.10 2 CFU/gr, dan C= 6.10 2 CFU/gr. Hasil analisis keragaman, jumlah total mikroba menunjukkan F Hitung (21,19082) > F Tabel 0,01 (18,00). Dengan demikian kosentrasi liquid smoke kayu pinus berpengaruh sangat nyata terhadap jumlah total mikroba ikan manyung asap. Hasil pengujian rata-rta kadar phenol ikan asap perlakuan A=0,7068 mg/kg, B=1,20622 mg/kg, dan C= 1,51028 mg/kg. Hasil pengujian rata-rata pH ikan asap ± sama yaitu perlakuan A= 6,3; B= 6,13; dan C= 6,3 dengan pH liquid smoke 2,8. Catfish (Arius thalasinus) is one of fish species which has good taste, delicious and good nutrition value. Fish is dipped in water containing liquid smoke with ratio of = 5% (A); 7, 5% (B); and 10% (C). the average of organoleptic value of the product were relatively high and there was no significant different between samples, water content of the product 55-59%, protein content 30-35%, fat content 4,95%-7,64% and ash content 3,38%-4,95%. Result for TPC showed that A = 15, 6.102 CFU/gr, B = 11.10 2 CFU/gr, and C = 6.10 2 CFU/gr. Based on ANOVA, it was obtained that there was significant different in bacterial content between samples (F observed (21, 19082) > F tables 0, 01 (18.00)). Phenol content showed significant different between samples where A = 0, 7068 mg/kg; B = 1, 20622 mg/kg; and C = 1, 51028 mg/kg.
