Abstract

Mathematical models in food processing aim to describe the different aspects of the processes and their dynamics quantitatively using theoretical analysis and experimental results. In addition to using these models to understand and describe a process, they can also be applied for control and optimisation purposes. In general, mathematical models offer new possibilities to manage the increasing complexity of the studied technologies and explore solutions in a short time, while reducing costs of operation.
