Street food has been implicated in adverse health outcomes among consumers. The safety of food and hygiene practice of street food vendors are major contributing factor to these health outcomes. This study was carried out to assess food safety and hygiene practice of street food vendors in Federal University of Agriculture, Abeokuta. A descriptive cross-sectional study design was adopted. A validated interviewer-administered structured questionnaire adapted from Nutrition related knowledge, attitude and practice questionnaire was used to obtain information from 50 respondents. Street food vendor is commonly defined as a person who offers food for sale to the public without a permanent built-up structure but with a temporary static structure or mobile stall. Street food vendors have a very poor social and health profile. This study is mainly to investigate the food safety knowledge and the hygienic and sanitary practices of street food vendors mainly in Hubballi-Dharwad city, Karnataka, India. This study used random sampling technique of survey with a target population of 100 street food vendors. Data was collected using self-structured questionnaire and was analyzed by using chi-square and percentage method. Results show that majority (79%) were male, belongs to the middle age group between 31-40 years. Majority of the vendors were married (64%) and were completed their primary education. Majority had been in the business for less than 3 years. About 74% of the vendors engaged in business to earn a good income. By considering overall aspects majority (more than 70%) of the respondents were not practicing the actions. The study concludes that street food vendors are mainly having a great knowledge towards all the aspects that is mainly about food safety and personal hygiene profile, but they are not practicing it properly.

This research sought to evaluate the food safety knowledge of street food vendors and the sanitary compliance status of their vending facilities, Zululand District, South Africa. Data collection was done in a face to face interview with respondents in a cross-sectional survey research design. Data was collected from 399 randomly selected street food vendors and 200 randomly selected street food vending facilities. Only a minority of the street food vendors had attended high school (47 %) and the vast majority (77 %) of them had not attended any food safety training courses. Overall, the vast majority (76 %) of the street food vendors had low food safety knowledge and only 14 % of the street food vending sites had high compliance with sanitary conditions. Street foods have become a major source of cooked food for most households and individuals in many developing countries including Ghana. However, the rising concern about food-borne illness has questioned the knowledge of the street food vendors to constitute safety practices for food handling. This study assessed the knowledge of street food vendors on food safety and food-handling practices in the Ejisu-Juaben Municipality of Ghana. The study used a cross-sectional mixed approach involving 340 participants selected by simple random sampling. A structured questionnaire and an observational checklist were used to collect data and analyzed using STATA version 12. Hygiene and Sanitary Practices of Street Food Vendors in Southern Kaduna, Nigeria
The purpose of this survey is to address the public health issues related to personal hygiene and sanitary practices of Street Food Vendors in Southern Kaduna, Nigeria taking into consideration such ailments as typhoid, cholera, diarrhea, stomach pains, Lassa fever and Ebola. The population of the study comprises all street food vendors in Southern Kaduna, Nigeria. Random sample of 200 street food vendors selling commonly consumed food were selected to represent 13% of the total street food vendors in the study area. Data collection is carried out using pre-tested structured questionnaire and observations made. The data are analysed using frequency counts and simple percentage. The results obtained from this study indicated that street food vendors lack personal hygiene and sanitary practice. Only about 5.5% of the respondent had formal training on food preparation while 57.5% acquired the skill from their parents. The personal hygiene of the vendors revealed that 44% of the street food vendors use their bare hands while serving food. 60% chew/talk while serving food and about 82.5% business premises were in the place of preparation of vended food. More than one third of the vendors interviewed do not treat their water for drinking purpose while waste and leftover food are used as feed for domestic animal. Most of the vendors used dust bin and bushes respectively as waste disposal site. This study therefore recommends the monitoring of preparation and sales of street vended foods by relevant agencies to prevent infections from the vended foods. Orientation and training of food vendors on hygiene and sanitary practices is also recommended.

Globally, the street food business has expanded rapidly and provides access to a diversity of inexpensive, ready-to-eat variety of food for customers. Street Food vendors (SFVs) operate where numerous customers exist and their operations are poorly regulated in Nigeria. Globally, SFVs were implicated in several outbreaks of foodborne diseases. This study therefore evaluates the behavioural characteristics and hygiene practices of SFVs in car parks in Ile Ife, southwestern Nigeria. The study was cross sectional in design and utilized interviewer-administered questionnaire on 160 randomly selected SFVs, targeting demography, food and personal hygiene practices and knowledge of foodborne diseases. Most respondents were <40 years (134, 83.7%); females (147, 91.9%); married (125, 78.1%); had at least secondary education (144, 90%); and vend whole meals (151, 94.3%), respectively. In addition, only 27 (16.9%) 'always' wash hands after using the toilet; 100 (62.5%) 'rarely' keep finger nails short while only 6 (3.8%) SFVs 'always' refrigerate leftover cooked food, though experiences power outages that compromise refrigeration temperatures. About 2 / 3 (61.9%) of the SFVs had no formal training and their medical status is unknown. Hence, inception and refreshers trainings should be mandatory and enforced by appropriate authorities. In addition, supportive monitoring, supervision, among others are necessary to promote compliance.

The street food industry has an important role in the cities and towns of many developing countries in meeting the food demands of the urban dwellers. It feeds millions of people daily with a wide variety of foods that are relatively cheap and easily accessible. Street food sector symbolizes the street life in Africa and it operates in an unstable and precarious state because the sector lacks legal recognition. There have been noticeable increases of food vendors in Nairobi, who sell both raw and cooked food items. There are not regulated, they operate haphazardly without any monitoring of what they prepare and how they do it. A study to determine hygienic and sanitary practices of vendors of street foods in Nairobi was carried out using a descriptive survey design. A sample size of 80 street food vendors selling commonly consumed foods was selected. Data was collected using in-depth interview schedules and observation checklists. Information from the study shows that vendors lacked training on food preparation. About 62% obtained food preparation skills through observation while 33% were taught by their parents in non-formal settings. The preparation surfaces used for the preparation of raw foods were not washed regularly. Cooked foods were stored at ambient temperature in cupboards, plastic bowls, jugs and buckets were just left in the open uncovered. Eighty-five per cent of the vendors had garbage and waste bins beside the food stalls. Personal hygiene was not also observed, as the vendors never covered their heads, handled money and food at the same time and they did not wear overcoats/aprons and handled food with bare hand. Street food vendors were not aware of hygienic and sanitary practice. The food is sold to unsuspecting clients who are likely to get food-borne diseases. This study recommends the establishment of street food centres by the city council, the training of street food vendors on hygiene, sanitation and the establishment of code of practice for the street food industry and the empowerment of Public Health Officers.
Food safety knowledge and practices of street food vendors in the city of Abeokuta, Nigeria

The study was conducted to evaluate the food safety knowledge and practices of street food vendors in Atbara city between March and April, 2008. The questionnaires respondents were 28% male and 72% were female, 48% of them had primary school education while 42% were illiterates. The most prevalent isolated bacteria from cooked meals, bottled drink and fresh juice were; Escherichia coli, Staphylococcus auerus and Bacillus sp. The viable bacterial counts were 4.6 CFU/ml, 3.7 CFU/ml and 4.1 CFU/ml for cooked meals, bottled drink and juice, respectively.
Identification of Food Safety Practices among Street Food Vendors in Delta State Nigeria

The research looked into how street food sellers handled food. The method used was a multistage selection technique. An aggregate of 155 vendors were chosen at random for the survey, and data were composed with designed questionnaire. The study's analytical instruments were descriptive statistics, likert scales and chi-square. High proportion of merchants were females, with an average age of 38 years. The respondents' educational levels revealed that 67.6% had only primary education with mean vending experience of 6 years. The food vendors had an awareness index of 80.2% with 64% usage index of recommended food practices. Washing food before cooking, covering food, storage in a hotspot, utensil cleanliness, a hot meal, well-cooked food, wash-kits with hygienic water, and reheating food were the frequently utilized methods. There was positive correlation between awareness and utilization of practices. It has become necessary that vendors are cognizant of all procedures necessary to maintain the safety and suitability of food.
In this study, some food vendors in Accra were surveyed to assess their knowledge in food hygiene and best food safety practices. Data on demographics, food safety knowledge and practices were collected from 50 food vendors using a 31question standardized survey tool. Street food vending was the main income provider for 84% of the vendors. Eighty Percent of the questionnaire respondents were females, with the majority age group ranging between 25-50 years. Majority of the vendors lacked health certificates. Generally, food vendors proved to be quite aware of the knowledge of proper food handling practices. It was recommended that there is further need for health education to improve the knowledge of food vendors on food safety and hygiene.
