Abstract
The introduction of new quality criteria in the early 1990's has led to the restructuring of agro-industrial chains and the search for new forms of domination, as has been the case in Los Altos de Jalisco, the main site of family-run dairies in Mexico. The paper analyzes the new contractual relations on the basis of three main aspects: a) the new quality standards for milk implemented by stockbreeders without being given adequate compensation, b) the management of seasonal production surpluses, in which stockbreeders have also assumed greater risks and c) the actual prices offered to producers and consumers, summarized in the fact that improvements in the quality and efficiency of the chain are not reflected in benefits for these agents but instead remain at the processing and distribution stages. It concludes that restructuring translates into a new hegemonic position of the agro-industries-without sharing risks and benefits-thereby jeopardizing the sustainable development of this localized production chain.
