Determination of type of honey produced in the different climatic regions of Bosnia and Herzegovina

The aim of this study was to investigate the impact of the environmental characteristics of a particular climate areas of Bosnia and Herzegovina on the type of honey produced in those areas. Physical, chemical and sensory characteristics of honey and pollen content in honey are the subject of ongoing research in the world, but still there is no universal method for classification of honey. Pollen analysis of honey in combination with other tests, e.g., pH, electrical conductivity and sensory properties, is often used for determination of type of honey. Acceptability of honey by consumers is based on the evaluation of sensory characteristics in the first place, which depend on the origin of plants from which the nectar (pollen) or honeydew was collected. Consumers and manufacturers are interested in classification of honeys because the most important characteristics of honey are dependent on its botanical and geographical origin. In this study were examined sensory properties, pH, electrical conductivity and pollen composition of honey samples collected from different climate regions, at different altitudes and at different vegetation season of Bosnia and Herzegovina. Laboratory analyses were carried out in three parallel determinations of the same sample of honey. In this research, 48 samples of honey were examined, out of which 29 were nectar (pollen) honey, 11 were mixed honey and 8 were honeydew.
Assessment of Honey Quality from the Middle Podrinje Area

The study aimed to examine the quality of honey from the Middle Podrinje area (Bosnia and Herzegovina). The research included a total of 21 samples of honey from the Middle Podrinje area: 12 samples of honey florals (municipalities of Srebrenica and Milici), 9 samples of acacia honey (municipalities of Zvornik and Bratunac). Physico-chemical parameters were determined as the main composition criteria for quality assessment in honey samples: mass fraction of water, total acidity, electrical conductivity, and ash. Samples of honey florals are of poorer quality compared to acacia honey, two samples had values of water content and acidity above the values prescribed by the Regulation. The color, aroma and fl avor are major sensory characteristics of honey, which are mainly determined by the botanical origin of honey as well as by processing and storage conditions. Increased moisture content above the maximum permitted level could result in honey spoilage, which aff ects its sensory properties. The higher water-in-honey content, the greater possibility of yeast fermentation and thus the change of the fl avor and color ofhoney. Fermentation process results in alcohol formation and, in the presence of oxygen, the alcohol will break down to acetic acid and water, which causes honey to have sour taste. The aim of this study was to examine the correlation of the obtained results and the overall quality of honey by testing some physico-chemical and microbiological parameters of honey quality. Evaluating the Physicochemical Properties of Some Kosovo’s and Imported Honey Samples

This study evaluated the physicochemical properties (moisture, pH, electrical conductivity, free acidity, hydroxymethylfurfural (HMF), proteins, insoluble solids, and ash) of 45 Kosovo’s and imported honey samples, using methods provided by national and international standards. The moisture values of all honey samples analyzed were below 20%. The free acidity was above 50.0 meq kg−1 in 14 out of 33 samples (42%) collected in Kosovo, while 2 out of 12 imported honey samples (16.7%) showed higher values than 50 meq kg−1. In this study, 7 out of 33 honey samples (21%) from Kosovo and one out of 12 honey samples from imports had soluble solids content below 80 °Brix. In terms of HMF, 5 out of 33 Kosovo honey samples (15%) and 4 out of 12 imported honey samples (33%) exceeded 40 mg/kg, which is the maximum content of HMF set in standards. This study was performed to investigate the physicochemical quality characteristics of honey produced in Southeastern Anatolia of Turkey. A total of 68 honey samples collected from different beekeepers were analyzed for sugar components, moisture, pH, HMF, electrical conductivity, free acidity, proline values, and diastase number using the methods recommended by the International Honey Commission. The color value was determined by the Hanna HI 96785 color identification device using the Pfund scale. The mean values of fructose + glucose, fructose/glucose ratio, sucrose, and maltose were 70.97 ± 3.27%, 1.21 ± 0.15, 0.90 ± 1.35%, and 2.88 ± 1.42%, respectively. Characterisation of Serbian unifloral honeys according to their physicochemical parameters

The characterisation of three unifloral Serbian honeys (acacia, sunflower and linden) was carried out based on some common physicochemical parameters (water content, electrical conductivity, free acidity, optical rotation and pH). A total of 201 honey samples, collected during the 2009 harvesting season, were analysed. Principal component analysis (PCA) and linear discriminant analysis (LDA) were used to highlight the data structure and to find the relationships between the physicochemical parameters and the botanical origin of honey. The variables that best discriminated the samples were electrical conductivity (ranging from 0.10 to 0.76 mS/cm), free acidity (ranging from 7.80 to 42.70 meq/kg) and pH (ranging from 3.17 to 5.85). LDA resulted in a classification model with a high predictive power, allowing further assessment of unknown samples of the three unifloral honeys. Determination of geographic origin of acacia honey samples based on physicochemical properties and chemometrics was attempted.
