RISK PERCEPTIONS ASSOCIATED WITH FRUITS AND VEGETABLE CONSUMPTION AMONG THE UNDERGRADUATE STUDENTS OF MASENO UNIVERSITY

Campus life is associated with a lot of freedom to choice. Some make wise choices while others, unfortunately, do not especially when it comes to diet. They perceive the consumption of fruits and vegetables differently. This study was carried out in Maseno University with the main aim being to establish the risk perceptions associated with fruits and vegetables consumption among the undergraduate students. This study was chosen because no study has ever been done in this study population on the same. Stratified random sampling was used to select the study population of 75 undergraduate students. Structured face-to-face questionnaires made of variables such as demographics, patterns of and risk perceptions associated with fruits and vegetables consumption, and the risk factors associated with fruits and vegetables consumption was used to collect data. In analysis, both descriptive and inferential statistical approaches were employed with SPSS and FCTs being used. The findings of this study will help to generate an all-inclusive participatory strategic intervention approaches to minimize the declining situation in their consumption. Besides, the study will assist in the planning of promotional campaigns aimed at ultimately driving the increase in fruits and vegetables consumption among the students and the youths at large. Fruits and vegetables consumption patterns among undergraduate students of Maseno University differ with respect to gender with females reporting of higher consumption of vegetables compared to males who report of consuming more fruits. It was also evidenced that more students consume more fruits and vegetables when at home compared to when in campus with notable cases within fourth year group of students. However, the observed differences were insignificant when subjected to independent sample t- test at α 0.005. Most fruits consumed consisted of mangoes, bananas and pineapples while vegetables consisted of kales and cabbage. Some of the factors associated with fruits and vegetables consumption included perceived benefits of which most subjects reported of knowledge of health and nutritional benefits on consumption. Others included perceived barriers of inaccessibility in local markets and inadequate money to buy in which the latter was the most significant variable. The cues to action assessed were frequency of watching T.V programmes on nutrition education and possibilities of reading nutrition books for leisure. Further females scored higher percentages in these assessments as compared to their male counterparts. However the scores were insignificant at 90% confidence interval independent sample t- test analysis

Investigating Factors Effect on Fruit and Vegetable Consumption: Applying Social Cognitive Theory

Journal of Community Health Research, 2020

Introduction: Regular fruit and vegetable consumption is one of the preventative indicators for the development of obesity, disorders, and diseases. This study aimed to identify the determinants of fruit and vegetable consumption based on social cognitive theory (SCT) among first-grade high school female students. Results: The mean (SD) score daily fruit and vegetable intakes were 3.43 () and 2.30 () units per day, respectively. The results of multiple linear regression analysis showed that environmental factors (β= 0.165, p= 0.009) and behavioral skills (β= 0.152, p= 0.025) have a significant effect on fruit consumption score. Behavioral skills (β= 0.151, p= 0.022) and social support (β= 0.143, p= 0.049) have significant effect on vegetables consumption score, the constructs of SCT explained 71% of the variances in fruit consumption and 9.8% of the variances in vegetable consumption. Mother's job (p= 0.032) and family income (p= 0.024) have a significant effect on fruit and veg...

Benefits and barriers to fruit and vegetable intake: relationship between attitudes and consumption

Journal of Nutrition Education, 1995

Consumption of fruits and vegetables is suggested to be beneficial in cancer prevention. However, surveys indicate that a large percentage of the population does not consume the recommended intake of fruits and vegetables. A mail survey was conducted in 1990 to examine attitudes toward nutrition and reported fruit and vegetable intake among randomly sampled Washington state residents (n = 1069; age range = 20-88 years). Individuals in low-income and low-education categories and males had significantly higher scores measuring barriers to fruit and vegetable intake compared to the highest income and education groups or females. All respondents had high nutrition concern despite income or education level. Nutrition behavior scores were significantly higher for individuals with high income. Results of the multiple regression analysis indicated that 16% of the variance in fruit and vegetable intake was accounted for by attitude variables. Barriers to fruit and vegetable intake were the largest component of variability in actual fruit and vegetable consumption. Results suggest a relationship between attitudes about barriers to fruit and vegetable intake and nutrition behaviors. Additionally, males and individuals with limited education and lower income may benefit from education directed toward reducing barriers to fruit and vegetable intake.
