This study was conducted to determine the nutritional value of hilsa fish from the six selected regions in Bangladesh. The moisture, protein, fat, carbohydrate and energy value were found 66.94 ± 7.34 to 72.04 ± 5.77%, 18.95 ± 3.97 to 20.56 ± 4.57%, 4.97 ± 0.89 to 8.21 ± 1.87%, and 3.08 ± 0.68 to 4.84 ± 1.22%, 0.35 ± 0.09 to 0.72 ± 0.05% and 128.38 ± 11.43 to 161.68 ± 13.21 kcal/100 g respectively. The pH, TVB-N and salt value were found 6.52 ± 0.07 to 6.84 ± 0.10, 2.01 ± 0.71 to 3.50 ± 0.33 mg/100 g and 2.05 ± 0.03 to 6.48 ± 0.07% respectively. The vitamin A and vitamin C value were found 33.50 ± 14.28 to 95.54 ± 11.69 µg/100 g and 11.20 ± 0.47 to 14.28 ± 1.93 µg/100 g respectively. The calcium (Ca), iron (Fe), phosphorus (P), magnesium (Mg), manganese (Mn), copper (Cu) and zinc (Zn) were found 144.21 ± 17.43 to 372.67 ± 17.44 mg/100 g, 9.04 ± 5.14 to 13.07 ± 5.17 mg/100 g, 118.17 ± 13.56 to 204.06 ± 5.89 mg/100 g, 34.18 ± 3.72 to 45.07 ± 9.22 mg/100 g, 8.54 ± 1.79 to 12.68 ± 4.3 mg/100 g, 0.95 ± 0.13 to 1.54 ± 0.29 mg/100 g and 0.94 ± 0.22 to 1.23 ± 0.19 mg/100 g respectively. These values are useful references for consumers in order to choose fish and shellfish based on their nutritional contents. These results also suggest that the proximate composition of hilsa fish greatly varies due to physiological reasons and changes in environmental conditions, i.e., spawning, migration, and starvation or heavy feeding.

The carcass traits and commercial characteristics of farmed freshwater Cirrhinus mrigala and Hypophthalmichthys molitrix were investigated to calculate yield data useful for programming semi-automated processing units. Specimens with average weights of 2500 and 3400 g were collected from both mrigal and silver carps, respectively. Samples were taken from grow-out culture ponds of the Central Institute of Freshwater Aquaculture (CIFA), Odisha State, India. Carcass and offal yields as well as carcass cutability were assessed. Head yields were recorded as 14.9 and 27.5% for mrigal and silver carp, respectively. The gutted yield, headless yield and skinless dressed round percentages were determined as 89.4, 74.5 and 67.6% for mrigal and 92.8, 65.4 and 62.0% for silver carps, respectively. The meat: bone ratio in filleting averaged 4.8 for mrigal and 3.1 for silver carp. The middle cut of mrigal had both the highest total yield percentage and highest meat yield, whereas this was equally distributed between both the fore and middle cuts in silver carp. In both mrigal and silver carp the dry matter, ether extract and protein percentages were highest in the fore cut followed by middle and hind cut. In silver carp the percentage fat content was found to be significantly higher than in mrigal.

Head yields were recorded as 27.1 and 10.07% for tilapia and puntius, respectively. The gutted yield, headless yield skinless dressed round percentage were determined as 80.0, 53.0 and 51.6% for tilapia and 62.9, 52.20 and 50.1% for Puntius respectively. An investigation was conducted to know the freshness quality and associated post-harvest loss of hilsa, if any, transported to Mymensingh from the major landing centers through Cox’s Bazar-Chittagong (route A) and Barguna-Chandpur (route B) routes for a period of July to October 2012. The average environmental temperature of the wholesale and retail markets was 30.7 °C and 30.6 °C where the body temperature of hilsa was 4.5 °C (route A) and 4.7 °C (route B), respectively. The Freshness quality of hilsa was assessed using sensory defects points (DPs) that eventually gave rise to numerical values ‘1’ being the freshest and ‘5’ being the worst quality. The DPs of hilsa were found 2.0, which reveal that the fishes were in excellent conditions, i.e., there was no significant post-harvest loss even during retail sale. Morphometric, meristic and proximate composition between freshwater and marine hilsa fish

Hilsa is the only fish that has secured recognition as the geographical indication product of Bangladesh. The present study was carried out to compare the morphometric, meristic and proximate composition of freshwater and marine hilsa fish. A number of freshwater hilsa were collected from Sandhya river and marine hilsa were collected from Chittagong Port. Morphometric characteristics showed higher value in marine hilsa than freshwater. Among them, total length (TL), standard length (SL) and head length (HL) of both varieties showed difference. Body proportions of both hilsa fish, were different. Number of pectorals, pelvic, anal fin rays showed different. Proximate data showed that, freshwater hilsa contained higher moisture content (70 ± 0.34 %) than marine hilsa. Protein (20.06 ± 0.94 %), lipid (13.8 ± 2 %) and ash contents (1.26 ± 0.15 %) were relatively higher in marine hilsa. Tenualosa ilisha from Chittagong and Khulna regions of the Bay of Bengal was analyzed which showed that proximate compositions varied among the different portions of fish body. The highest value of moisture found in dorsal portion of the fish (Khulna region) whereas the lowest value of moisture found in caudal portion of the fish (Chittagong region) were 56.59 and 54.69%, respectively. Hilsa (Tenualosa ilisha) is the national fish and geographical indication (GI) product of Bangladesh. Salting is the most suitable and oldest method of Hilsa preservation in Bangladesh. The quality of the traditionally salted dried fish in retail markets of Bangladesh is doubtful. This study aimed to assess the organoleptic, nutritional, biochemical, and safety attributes of dry-salted Hilsa. The hilsa shad Tenualosa ilisha (Hamilton, 1822), is a commercially important and highly relished food fish. This paper presents the length-weight relationships (LWR) and condition factor of hilsa, throughout its geographical distribution in India. A total of 910 samples of T. ilisha, comprising 404 males and 288 females collected from various locations of east and west coasts of India were used for analyses. Heterogeneity in the LWR of males, females and pooled population was noticed. The regression coefficient (b) ranged from 2.07-3.68 for pooled, 0.75-3.03 for males and 1.78-2.97 for females. The coefficient of determination (R2) varied between 0.72-0.98 in pooled, 0.73-0.94 in males and 0.76-0.97 in females.
