Gaster headcanons:

The original Wing Dings Gaster was a Boss Monster and an eccentric, idealistic scientist who loved logic puzzles and word play.

• He thinks his first name embarrassing and prefers just Gaster. Only his closest friends can call him Wing Dings.
• The Determination Experiments started as an attempt to shatter the barrier without killing any humans.
• Gaster had stolen the remains of Chara/Asriel’s SOUL and used it to power the Core. He wanted to delay Asgore’s promised war on humanity, a war he was certain they would not win, and because he believed that the kids would’ve wanted to help the Monster Kingdom in any way they could, even in death.
• Alphys was Gaster’s apprentice.

Sans and Papyrus were two fractions of Gaster’s SOUL that were separated from him during his Determination experiments. Sans and Papyrus had each inherited the main traits of Gaster’s personality but lacked his other traits that balanced him out. That’s why the skelebros are seem so extravagant and peculiar to the citizens of Snowdin.

• Sans inherited Gaster’s intelligence, integrity and quick wit but is cynical, sarcastic and apathetic.
• Papyrus inherited Gaster’s kindness, idealism and diligence but is naïve, bombastic and socially awkward.
• Sans and Papyrus both have Gaster’s memories from before their “birth” and have a “psychic” connection to their “creator”.
• Papyrus referred to Gaster as their Dad, while Sans just referred to him as “the Doc”.

The “Mysterious Man” that Frisk (and Chara) meet in the room is the fractured remains of the original Gaster. He is somewhat omniscient and is aware of the multiple timelines and realities. He is responsible for the "Player" gaining control the Protagonists in various games as an experiment. He then gets to observe how they influence world around them.
