Spring 2021: Spring has sprung! In fact, it feels like Summer here and these remind me of Summer, so they made it to our dinner menu tonight!

I eat them for a meal, but the rest of my crew eats them as a side dish — sometimes we serve them with simple beef tacos, other times, like tonight alongside some grilled chicken… but they pair with lots of dishes!

Update July 2020: We first made these several years ago and they’ve been a fan favorite ever since!

Nachos are a great snack, main or side dish while we are all spending so much time at home, and using homemade sweet potato chips as the base makes them extra tasty!

Plus the are entirely adaptable to tastes — use more or less of your favorite veggies, beans and cheese, and use mostly pantry ingredients so you can decide make them last minute!

We are big fans of nachos– enjoying everything some simple cheese on chips as a quick afters school to making big spreads of our Ultimate Two Bean Veggie Skillet Nachos for Game Day Eats.

Here, we basically made our favorite Ultimate Two Bean Veggie Nachos using homemade sweet potato chips as the base and these Sweet Potato Nachos are out of this world!

They are packed with goodness and so yummy!

We eat them for snacks and as side dish (or main for me!) on Taco Tuesdays.

They taste indulgent and delicious but are packed with nourishing, real foods.

Here’s what you’ll need:

sweet potatoes

canned black beans

canned pinto beans

scallions

red onion

bell pepper (any color but I like yellow or orange for additional color)

tomatoes

jalapeno (optional)

Mexican cheese blend (lately I’ve been using Monterrey jack)

and cilantro.

As with all our recipes, this is completely adaptable to tastes!

Add more of your favorite ingredient, omit one you don’t love or substitute any vegetable or bean.

Make it so you love it and enjoy it!

And they couldn’t be easier to make.

Let’s start with the homemade sweet potato chips… so easy and sooooo good!

A must try if you like sweet potatoes at all!

You simply:

Then literally pile on the toppings!

Pro tip: the finer you chop the veggie toppings and the more cheese you use, the less you taste any particular veggie and the more even non-veggie lovers will love the nachos!

Top the baked sweet potato chips with two types of beans, red onion, peppers, tomatoes, scallions, cilantro, Mexican cheese, and jalapeños (optional but a hit in my house) and bake for just 10-12 minutes or until cheese is melted.

Eat as is, or top with guacamole, avocado or sour cream.
