Opening Chocolate | Karla on Instagram: "A NEW alternative to milk in chocolate!

I have been watching all the interesting things happening at @oodaalolly for a while now like Filipino flavours (chocolate balut?!?), gorgeous wrapper art, and unique collaborations. But just recently they sent me some bars that are part of their new Kickstarter for me to taste and review. And it is unique.

It is called their Tomorrow Bar. It is a completely vegan MILK chocolate bar. Yep, you read that right, animal-free milk. They have collaborated Perfect Day, which uses microflora to produce milk protein.

There is a lot of long-standing science that goes into this tasty bar. Perfect Day has co-opted microflora biological machinery to take sugar and produce whey or beta-lactoglobulin - milk protein. This is not exactly new science, a variety of microflora are used to produce all kinds of things (antibiotics, vaccines, fuels, medicines, citric acid, etc.) So NO animals were used to make this milk, not even their physical DNA.

Anyhoo....cool science aside, they sent me the Tomorrow bar and their 60% dark milk for comparison. The 60% milk is exactly what you would expect, a nice rich cocoa bar with notes of nuts and butter. The Tomorrow bar is more like a traditional milk with light cocoa notes, butter, cream, caramel, and toffee, but also something I can't quite put my finger on. When I let other people in the house sample I got mint (i don't think so) vanilla (almost a vanilla but not quite for me), tonka bean but not exactly (this one is close but no real spiciness of the Tonka) and light licorice (IDK maybe very extremely light).

But regardless of my inability to precisely describe the tasting notes it was a very smooth and creamy bar. It will be interesting to see where this goes from here. Oat milk in chocolate started with one craft maker (@mapchocolate) so you never know!
