Prosciutto Bites (original) (raw)

prosciutto bites recipe

Erin McDowell

Asparagus, melon, cauliflower: What do these three foods have in common? They’re all exponentially more delicious when wrapped in prosciutto. Keeping with that theme, we’d like to introduce you to our newest creation: prosciutto bites. Think of this appetizer as a reverse pig in a blanket. We take bite-sized balls of premade pizza dough, wrap them with slices of salty prosciutto and coat them with Parmesan cheese. Just bake, serve and await the compliments.

Ingredients

1 pound prepared pizza dough

8 ounces sliced prosciutto, cut in half widthwise

2 tablespoons extra-virgin olive oil

Freshly ground black pepper

¼ cup grated Parmesan cheese

Directions

1. Preheat the oven to 400°F. Grease a baking sheet with nonstick spray.

2. Divide the pizza dough into 16 even pieces (about 2 tablespoons each), then roll into balls.

3. Take a piece of prosciutto and wrap it around a dough ball. Gather the excess at the base of the ball and put that side down on the baking sheet so the meat stays in place. Don’t worry if some of the dough is exposed--it doesn’t need to be perfect. Repeat with the remaining dough balls.

4. Brush each ball with olive oil, then garnish with a sprinkle of black pepper and 1 to 2 teaspoons Parmesan.

5. Bake until the prosciutto is golden and crisp and any exposed dough is golden, 15 to 17 minutes. Cool 5 to 10 minutes before serving. Serve warm or at room temperature.
