Vegetarian tacos with black beans are my go-to but they are certainly not the only option.

You can make vegetarian tacos with kidney beans, pinto beans, or any creamy white bean such as Great Northern or cannellini.

  1. Toss the Potatoes With Oil and Spices. Spread them into an even layer.

  1. Bake the Potatoes. Bake at 400 degrees F for 25 to 30 minutes, flipping twice during baking.
  2. Toast the Spices. Cook until fragrant.

Roast the sweet potatoes up to 1 day in advance and store them in the refrigerator. Chop the zucchini up to 1 day in advance, storing it separately in the refrigerator.

What Are the Best Toppings for Vegetarian Tacos?

How Do I Warm Tortillas Over an Open Flame?

If you have a gas stove, you can easily warm your tortillas using the open flame. Turn one of your burners to medium-low heat, then use tongs to lay the tortilla directly over the flame (do NOT add any oil to the tortilla before doing this). Heat for about 20 seconds per side, or until the tortilla is charred to your liking. Carefully transfer the hot tortillas to a plate to cool.
