Eleanor Wilkinson Fish Pie Making fish pie for one feels sort of excessive, not to mention exhausting. This one couldn’t be easier, though, as I’ve switched out the mashed potato for thin slices of potato that simultaneously soften and crisp up in the oven. You can use a fish pie mix for this, or just one fish fillet. If opting for the former, a frozen mix is a useful way to avoid waste. If opting for the latter, I would choose salmon as it holds its shape so it doesn’t overcook as it bakes.
Eleanor Wilkinson Lasagne A traditionally time-consuming, somewhat strenuous dish that leaves a mountain of washing-up, this version, though not traditional, fully replicates the flavours and feel of a layered lasagne in a simple, stress-free way.
Eleanor Wilkinson Brothy pasta with beans and greens My take on the Italian classic, ‘pasta e fagioli’, meaning pasta and beans, this broth is comfort maximised. The hint of chilli adds a lovely warmth without too much heat and the grated Parmesan makes the broth silky and rich. Depending on the shape of pasta you use, you may need to add more water, so keep an eye on it and loosen if needed.
