I just found out that my neighbor's birthday is tomorrow, so I decided to finally make the beer bread I've been promising him. I thought I'd share it with LJ.I don't like the taste of beer though I do like cooking with it. This bread has been a hit with everyone I've ever given it to, even those who swear they hate beer. This is good with butter or a cheese spread.Beer Bread3 cups self-rising flour3 Tbsp. white sugar12 oz. beer1/4 cup melted butter.Combine beer, flour, sugar. Mix well. Put into greased and floured baking pan.Pour melted butter over the top. Stick into 375 degree F oven for 45-60 minutes. | |

Prep time: 1 hourReady in: 90 minutesMakes: 24 cookies1 19.5 oz. box fudge brownie mix1/4 cup butter, melted4 oz. cream cheese, softened1 egg1 cup powdered sugar1 cup creamy peanut butter1/2 container ready-to-spread chocolate frosting (about 3/4 cup)Heat oven to 350 degrees F. In medium bowl, beat brownie mix, melted butter, cream cheese, and egg 50 strokes with a spoon until well blended. (dough will be sticky)Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls, 2 inches apart, to make 24 cookies. Smooth edge of each to form round cookie.In small bowl, mix powdered sugar and peanut butter with spoon until mixture forms a ball. With hands, roll rounded teaspoonfuls into 24 balls. Lightly press 1 ball into center of each ball of dough.Bake 10 to 14 minutes or until edges are set. Cool cookies on cookie sheets at least 30 minutes.Remove cooled cookies from cookie sheets. Spread thin layer of frosting over peanut butter portion of each cooled cookie.High Altitude (3,500-6,500 ft.): Before baking, flatten cookies slightly. Bake 11 to 15 minutes. | |

Chicken-Mushroom Soup• 3 Chicken Breasts• 2 teaspoons olive oil • 1 cup peeled, sliced carrots • 1 cup peeled, chopped onions • 1 cup peeled, sliced leeks • 1/2 cup sliced celery • 1 teaspoon fresh (or 1/2 teaspoon dry) thyme • 2 pounds mushrooms, sliced • 6 cups chicken broth • salt and pepper, to taste • 4 teaspoons minced chives, for garnish Boil chicken in 6 cups water until chicken is cooked. Drain broth through cheesecloth and save. When chicken is cool enough, remove and discard skin and bones. Chop chicken into bite-sized pieces and set aside.Heat oil, add vegetables (except mushrooms) and saute. Stir in thyme and mushrooms and cook 5 minutes. Add chicken, broth and seasonings. Simmer covered for 30 minutes. Noodles can be added to soup if desired. | |

This is the easiest chicken and dumplings recipe to make, plus it's quick. I keep the ingredients for it stocked at all times for nights when I want to make something that doesn't take long or I just need a good warm-me-up food.I got the original recipe from the side of the frozen biscuit package, and then I modified it into something I like better. This is a really nice Dutch baked treat with a slight licorice taste (anise), and super easy to make.Taai Taaiboil:1 c honey1 c sugar1 c waterremove from heatstir in:1/2 tsp salt1 tsp baking soda1 tsp anise3 c flourspread into a 9x13 pan and bake at 325 for about 35 mins.cool overnight and cut into squares. | |

As stolen from the back of a dried Apricot packet, which I found when trying to be good and eating fruit. Albeit dried....Personally I don't think this recipe really needs the apricots, but as I found it on there, I did add them. Next time I won't though. Got it off all recipes.comIt is a million calories but must say it is worth it..Serve w/ icecream. It is almost like a lava cake you get when you go out. Original recipe yield: 1 - 10 inch Bundt cake.Prep Time:30 MinutesCook Time:1 Hour Ready In:2 Hours Servings:12 (change) --------------------------------------------------------------------------------INGREDIENTS:1 (18.25 ounce) package devil's food cake mix 1 (3.9 ounce) package instant chocolate pudding mix 2 cups sour cream 1 cup melted butter 5 eggs 1 teaspoon almond extract 2 cups semisweet chocolate chips --------------------------------------------------------------------------------DIRECTIONS:Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch Bundt pan. In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in sour cream, melted butter, eggs and almond extract. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Blend in chocolate chips. Pour batter into prepared pan. Bake in preheated oven for 55 to 70 minutes (till top had a little spring). Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. | |

Well, you asked for it! I thought I had already posted this recipe, but I think that was in a different community. This cake is super easy to make, and really delicious!NO BAKE MOCHA CHEESECAKE(Taken from 250 Best Cakes and Pies by Esther Brody, with some of my own adaptations)CRUST1 1/4 c oreo crumbs1/4 c sugar1/3 c melted butter or marjarineIn a small bowl, mix together ingredients until crumbly. Set aside 1/4 c of mixture. Spread the rest evenly onto the bottom of a lightly greased 10" spring form pan. Chill.FILLING2 pckg cream cheese, softened1 can (10 oz) sweetened condensed milk2/3 c chocolate syrup2 Tbsp instant coffee granules1 Tbsp hot water1 c whipping cream, whippedBeat cream cheese until smooth. Add condensed milk and syrup, beating until well-blended.In a small bowl, dissolve the coffee granules in the hot water. Stir into cheese mixture and mix well. Fold in whipped cream until mixture is well combined.Pour into crust, cover, and freeze for min 6-8 hours. Sprinkle on leftover crust crumb mixture. Freeze for up to 6 months. Serve frozen.Enjoy!! | |

I'm trying to slim down, but I don't want to lose good skin and hair tone, or the theraputic time I get to spend cooking. I've always loved fresh food, so at least this way, I get plenty of chance to explore fruits and healthy alternative foods. I love chocolate-covered pretzels. Yogurt ones too. But I think they're pricey at the grocery usually.A friend makes them and I beg her for a bunch every time she does. She finally just said, "Why not make them yourself? They're quick, easy, and cheap."She was right, and the kids and I made a batch to give away for Christmas goodies. I thought I'd share the 'recipe' here in case anyone is looking for an easy goodie to make and pass out.All you need is a big bag of pretzels. (I got the traditional design and not sticks, but a friend of mine said she's going to buy the rods and use those. I want to try that next.)almond bark (can be found in the baking goods aisle near the chocolate chips in my store. I usually get white, but I'm going to buy chocolate next.)wax paperBreak off a few squares of the almond bark and put in a microwave-safe bowl. The instructions on my bag said to put on high for one minute, stir, and then 30 seconds each time after that until melted. It didn't take long for mine to melt, and you don't want to get it too hot or it will scorch.I then dipped the pretzels halfway into the chocolate and laid them on wax paper to dry. Some I sprinkled colored sugar on, some I just drizzled the chocolate over using a knife. If you want to dip them completely, have two forks or some tongs on hand.If you need to rehead the chocolate, do so at 30 second intervals and then stir. These are so easy to make and highly addictive when eating! The cost wasn't much at all. Almond bark was less than $1.50 and whatever the cost of the big bag of pretzels. I used up most of my almond bark and still have half a bag of pretzels. Very cheap, very easy to make, and people love it. Cross-posted | |
