The OSX installer script is in Mac/BuildScript/build-installer.py.
For 2-way builds, it essentially does:
export MACOSX_DEPLOYMENT_TARGET=10.3 configure -C --enable-framework --enable-universalsdk=/Developer/SDKs/MacOSX10.4u.sdk --with-universal-archs='32-bit' --with-computed-gotos OPT='-g -O3'
and for 4-way:
export MACOSX_DEPLOYMENT_TARGET=10.5 configure -C --enable-framework --enable-universalsdk=/Developer/SDKs/MacOSX10.5.sdk --with-universal-archs='all' --with-computed-gotos OPT='-g -O3'
