However, CPython has been used for years to distinguish CPython-the-reference-implementation from Python-the-language-definition. Starting to call it something else now would just confuse people for no good reason.
As Greg said, it may be better to think of it as standing for "Classic Python" rather than merely "A Python interpreter written in C".
