_7:08 am_[murun] Stir fry Today I used some chestnut mushrooms, wet garlic stems, spring onions and chinese leaf from my box. Stir fried them all up in a little oil, added cashew nuts and sweet and sour sauce, tipped over some boiled noodles and... (2 Comments |Comment on this)

_7:52 am_[murun] Vegeburgers and Salsa Today I made vegeburgers (from a packet mix, cheat!) and salsa over Romaine lettuce with steamed asparagus.For the salsa I finely chopped up a stem of wet garlic, 2 spring onions, 6 very ripe tomatoes, one red medium hot chilli (de-seeded first) and a handfull of fennel leaves. Mushed it up together as much as I could without destroying the texture and left it to mingle for an hour.Spooned over the lettuce, plonked burgers and asparagus on top and served. (Comment on this)

I scoffed them at work and can truly say they were the nicest I've ever tasted.I've been a bit lax posting recipes of all the things I do with this stuff this week but next week I'm off work so I can cook like a madlady!!! _8:30 am_[murun] Pasta salad Today I made a simple pasta salad with my veggies.Frilly lettuce, watercress, quartered tomatoes and slithers of cucumber from the box.Fusili pasta, cooked then cooled, mixed with grated Double Gloucester cheese and a tablespoon of mayonnaise. All stirred together = yum!Kiwi fruit for pud. (Comment on this)

Each week, on a Thursday I get the fruit and veg box scheme from http://www.rivernene.co.ukWhat is a box scheme? Usually run by a local farm, it puts a selection of seasonally grown crops into the box, delivers it freshly picked/dug up direct to you with less transportation and packaging than the usual supermarkets.
