The subjects in this study was 30 people respectively for each households and catering. Data was collected through interviews and discussions using questionnaires. Data of subjects acceptance and preference were analyzed using descriptive statistics and Friedman test. Average cooking oil used by household subjects was 0.185+0.070 kg/day and catering was 3.87+2.46 kg/day. Most households (73.3%) and catering (66.7%) could not accept cooking oil fortified with carotene from RPO due to its colour and aroma. Fortified cooking oil had orange colour and rotten aroma (of odor). More than half of households (66.7%) and catering (63.3%) could not accept the fried product using fortified cooking oil because of its yellow colour. Friedman test showed that there were differences in both subjects acceptance to nonfortified a...

This study was a clinical trial with randomized double blind controlled design. Thirty adult subject (age 40-60) with MetS are divided into 2 groups. Intervention group were given palm oil enriched with 6.5% phytosterol and used as cooking oil for habitual use for 8 week. The control group were given palm oil without phytosterol. Nutrition intake was assesed by recalls every 2 weeks. Blood lipid profile, blood glucose and anthropometry were analyzed at pre and post intevention. After 8 week intervention, estimated total palm cooking oil and phytosterol consumption on intervention group were 46±23 g/day and 2±1 g/day. There were no significant change of the LDL-choleseterol level (p>0.05) but there were a significant reductiton of serum total cholesterol and triglyceride level compared the control group (respectively p=0.007 and p=0.027). In conclusion with high level palm cooking oil intake, estimated phytosterol intake had reached the target and there are slight improvement of the lipid profile on MetS subject .

Study design was cross-sectional and subjects were selected using stratified random sampling with proportional allocation. Population were 3rd, 4th, and 5th grade students atPekayon 16 Pagi Elementary School with the total subjects 158 students. Nutrient density was measured by NRF (Nutrient Rich Food) 9.3 index method. The study found that most of the subjects had adequate protein and energy intake density but low calcium, vitamin A, and vitamin C intake density. Energy, vitamin A, vitamin C, calcium, iron intake density were not correlated with BMI/A (p>0.05). Energy density was negatively correlated with food price (r=-0.622). Nevertheless, nutrient density was positively correlated with food price (r=0.614).

The specific objectives were to analyze the peroxide value (PV), acid value of free fatty acid (FFA) and carotenoids (expressed as beta-carotene) content of unfortified bulk palm oil in Indonesia. The study showed that the quality of initial bulk palm cooking oil, both at the level of manufacturers and distributors, was inconsistent; however, it was still in compliance with the Indonesian standard for cooking oil (SNI 77092012). The PV and FFA range of bulk palm cooking oil analyzed was 0-8.94 meq O2 kg-1 and 0.06-0.23% respectively, and the range of carotenoids content (expressed as beta-carotene) was quite low, only 1.2-3.05 ppm, respectively. The results of this study could be used as the basis of vitamin A fortification in palm oil, since the sta...
