Free fatty acids from total lipids and phospholipids in minced fish flesh from three sizes of Cac... more Free fatty acids from total lipids and phospholipids in minced fish flesh from three sizes of Cachama (Colossoma macropomum) and Sardine (Sardinella anchovia) were evaluated. Cachama's most abundant unsaturated fatty acids from the total lipid fraction were: C18:1 (31-38%); C18:2, n-6 (13-15%); and C20:4, n-6 (3-5%), while in sardine were the follows: C18:1; C20:5 n-3 (12-24%) and C22: 6,n-3 (7-24%). C20:5, n-3 increased with the size and C22:6,n-3 decreased. The variance analysis indicated that percentage of polyunsaturated fatty acids of n-6 series in the total lipids of cachama and n-3 series in sardine were affected by the storage temperature from -10C to -20 degrees C (p < 0.01). Storage time had effect on the stability of sardine fatty acids (p-0.01) and cachama (p < 0.05). Sardine minced flesh presented the highest value of free fatty acids at-10 degrees C during the second month of storage (620 mg%) while cachama at the fourth month (230 mg%). TBA- value in sardine increased at -10 degrees C from 5.5 to 23 mg of malonaldehyde in fourth months while in cachama these value were almost the same (2-6 mg-kg) during the storage period at -10 degrees C and -20 degrees C.

Determinamos el efecto de los lipidos de la dieta en la contraccion de anillos de aorta y en la c... more Determinamos el efecto de los lipidos de la dieta en la contraccion de anillos de aorta y en la concentracion de derivados del NO• en el plasma. Se utilizaron ratas Sprague-Dawley machos alimentadas por 6 semanas con una de las 3 dietas: ratarina, ratarina mas 5% de aceite de soya o ratarina mas 5% de aceite de oleina de palma + soya. Anillos de aorta toracica se fijaron en un bano de superfusion y se determino el porcentaje de fuerza de contraccion a dosis crecientes de norepinefrina (1 x 10-10 hasta 1 x 10- 5 M ). Se analizaron los nitritos, nitratos y nitrotirosina como derivados del NO•. La dieta con oleina+soya presento el mayor porcentaje del acido graso C18:1,n-9 y el grupo que la ingirio presento el menor porcentaje de la fuerza de contraccion, la mayor concentracion de nitrotirosina y menor concentracion de nitratos en el plasma (p<0,05). The purpose of this study was to know the effect of the consumption of palm olein on triacylglycerides and cholesterol levels as well as lipoprotein fractions in the blood plasma of healthy individuals from both sexes. MATERIALS AND METHODS Different types of fats were administered for 12 weeks to 60 subjects, 45 male, 15 female, between 19 and 45 years of age, who were divided into three groups: the mix group (MG) was administered oil, margarine, and mayonnaise prepared with 50% olein; the olein group (OG) consumed fats prepared with 100% olein; and the control group (CG) consumed regular fats of customary use by the population.
