Methods In this retrospective cohort study, data were extracted from the medical records of women aged 40 to 60 years, encompassing both premenopausal and menopausal phases. The variables under consideration comprised anthropometric indicators like weight, height, age, percentage of body fat, as well as sociodemographic elements including place of origin, marital status, physical activity, frequency of visits to nutritional consultations, and dietary consumption patterns. Additionally, the body mass index (BMI) was computed to determine overweight and obesity. Sprouted products are a food alternative that contribute to improving human nutrition. Quinoa has... more Sprouted products are a food alternative that contribute to improving human nutrition. Quinoa has a large amount of natural antioxidants. The dry and hard grains when they undergo a germination process change to tender and slightly acidic sprouts that contain amino acids, minerals, vitamins, enzymes that help digestion and antioxidants. Furthermore, sprouted quinoa has a high protein content and a low concentration of saponins. Previous studies have shown that sprouted quinoa has shown an increase in protein, calcium and ascorbic acid content. Quinoa sprouts improve the organoleptic characteristics of quinoa grains; few studies have used sprouted quinoa in the preparation of beverages. The objective of this study was to prepare a beverage based on sprouted quinoa using a simplex lattice mix design to determine the optimal formula. Three varieties of sprouted quinoa were used: white (Salcedo INIA), red (INIA-415 Pasankalla), and black (INIA 420-Negra Collana). The quinoa was incubated at 30°C in the dark for 48 hours at a relative humidity of 98%. Ten treatments with different proportions of the three types of sprouted quinoa were used. The antioxidant capacity and consumer satisfaction of the ten treatments were evaluated. The ABTS method was used to measure the antioxidant capacity of each treatment. The optimal drink mix was composed of 81.67% sprouted black quinoa, 18.33% sprouted white quinoa, and 0% sprouted red quinoa. Furthermore, the consumer acceptability results were similar across all treatments (p>0.05). A nutritional analysis revealed significant differences (p<0.05) between the optimized drink and the control treatment. The microbiological analysis demonstrated that the formulated drink met the required sanitary norms for aerobic mesophiles, coliforms, molds, yeasts, and absence of Salmonella. The quinoa beverage made from three varieties of germinated quinoa represents a novel alternative to the current drinkable products marketed in Peru due to its nutritional content, antioxidants, and ease of preparation.

Given those two premises, the conclusion follows logically that favourable impact reported for PCVs in preventing pneumococcal disease should be reflected in the infant mortality rates (IMRs) from all causes. Using publicly available datasets, country-level IMR estimates from UNICEF and PCV introduction status from WHO, country-specific time series analysed the temporal relationship between annual IMRs and the introduction of PCVs, providing a unique context into the long-term secular trends of IMRs in countries that included and countries that did not include PCVs in their national immunisation programmes. In Peru, insect consumption, as a nutritional complement or as the main source in the diet, is li... more In Peru, insect consumption, as a nutritional complement or as the main source in the diet, is limited to the regions of our the central jungle where Atta sexdens ants are consumed. An energy bar based on Andean grains with Atta sexdens ant flour was formulated. The ants were obtained from the department of San Martin, district of Rioja, province of Rioja. Four different formulations were prepared with different Atta sexdens ant flour concentrations: 13%, 17%, 20%, and 23%. Moisture, total fat, ash, proteins, fiber, carbohydrates, instrumental texture, and organoleptic analysis (taste, texture, and color) were performed. The developed cereal energy bar presented a 10 g protein content in 100 g of the final product. Acceptability was evaluated in adolescents and young adult populations. The developed cereal bars presented a high protein content, adequate organoleptic properties and high acceptability.

El azúcar, el sodio, las grasas saturadas y las grasas trans forman parte de las sustancias cuyo consumo se recomienda reducir. Objetivos: Cuantificar el contenido de azúcar, sodio y grasas saturadas que se declaran en el rotulado nutricional de productos vendidos en supermercados. Métodos: Estudio descriptivo para el que fueron seleccionados 200 productos, los cuales se clasificaron en cuatro grupos: snacks de cereales, snacks de tubérculos, snacks de frutos secos y bebidas no alcohólicas. The purpose of this study was to assess the quality of nutrition information published by health weeklies in the surroundings of four hospitals in Lima, Peru. A cross- sectional study was conducted using a mixed methodological design involving both quantitative and qualitative analyses. Thirty-seven hard copies of 4 health weeklies were purchased over the 10- week study period. Bivariate Logistic Regression was performed to examine all available journal characteristics associated with the quality of provided information. Logistic Regression Models were estimated for the independent variables that showed statistical significance in the bivariate analysis. A cross-sectional study was carried out using the National Household Survey (ENAHO) 2019 database. After joining the database, the household type variables were created. To calculate the probability with the “logit” model of purchase, the variables—family size, income, types of household, and total expenditure—were selected as a measure of the purchasing power of the family. Para aproximarnos a los gastos en salud y gasto catastrófico se hizo 6 modelos de cálculo catastrófico, y las variantes son los tipos de gasto en alimentos que describe la encuesta ENAHO, en el capítulo de Sumaria. A través del modelo regresion binaria se hicieron los cálculos, para definir las formulas de la variable dependiente, fue necesario realiza una correlación para definir si se debían trabajar con todos o discriminar alguno de ellos. This study aimed to elaborate on yacon flakes and determine the proximal composition of fresh yac... more This study aimed to elaborate on yacon flakes and determine the proximal composition of fresh yacon and final flakes, made at different temperatures (120°C, 150°C and 180°C) for 20 mins. We measured the acceptability of the sensory attributes: taste, texture, odour and colour and the global acceptability at the laboratory level, using semi-trained panellists and an unstructured hedonic scale. The acceptability of the flakes was measured at different temperatures. Our results indicate that the flakes made at 180°C had the highest acceptance (87%), and the flakes made at 120°C had 80% of unacceptability. Our data were analysed according to the analysis of variance (ANOVA) and Tukey's test. We found significant differences between the averages of the taste scores (T0:7.1; T1:7.6; T2:6.7; T3:4.6), p<0.05; texture (T0:7.1; T1:7.2; T2:5.7; T3:4.5), p<0.05; and odour (T0:7.2; T1:7.6; T2:5.1; T3:3.3), p<0.05. Methods: Analytical, experimental and prospective study. The population consisted of 56 male rats between 300 and 350 g, distributed in three experimental phases: Pre-pilot phase PPP (6 rats), Pilot phase PP (10 rats), and Experimental phase EP (40 rats). In the pilot phase, 10 rats were subjected to damage with 8.5% ethanol, which was given intragastrically. El estudio es de tipo descriptivo y diseño transversal con enfoque cuantitativo. Se trabajó con 46 productos dirigidos a niños entre 6 y 35 meses. La recolección se realizó de marzo a agosto del 2018 en supermercados y farmacias de la ciudad de Lima, Perú. La prevalencia de anemia en niños y niñas menores de 36 meses es más alta en la zona rural y en la sierra. A pesar de que Lima Metropolitana tiene una de las prevalencias más bajas del país (3 de cada 10 niños presentan anemia), concentra el mayor número de niños con anemia, con cifras similares al número de niños que obtenemos al sumar las cuatro o cinco regiones con mayor prevalencia en el país. Materiales y metodos: Estudio observacional, analitico de corte transversal Muestra randomizada de ninos entre 6 y 35 meses de edad. Se tuvo 239 madres, de la zona de Canaris en la region Lambayeque en Peru. Se desarrollo una encuesta para conocer los patrones de alimentacion a traves de un recordatorio de 24 horas, aspectos socioeconomicos y de desarrollo del nino. Resultados: Los ninos sin desnutricion consumen mayor cantidad de productos lacteos a la edad de 25-36 meses en comparacion con los ninos con desnutricion (13,5% vs 3.8%), respectivamente; P<0,05. El consumo de frutas o verduras enteras y en jugos es muy bajo en todos los ninos. A cross-sectional study was carried out using the National Household Survey (ENAHO) 2019 database. After joining the database, the household type variables were created. To calculate the probability with the “logit” model of purchase, the variables—family size, income, types of household, and total expenditure—were selected as a measure of the purchasing power of the family. El Resultado de este estudio tiene como base la encuesta de hogares ENAHO 2008, en la que se ha h... more El Resultado de este estudio tiene como base la encuesta de hogares ENAHO 2008, en la que se ha hecho una descripción de las variables que podían estar formando parte del gasto en salud. Para aproximarnos a los gastos en salud y gasto catastrófico se hizo 6 modelos de cálculo catastrófico, y las variantes son los tipos de gasto en alimentos que describe la encuesta ENAHO, en el capítulo de Sumaria. A través del modelo regresion binaria se hicieron los cálculos, para definir las formulas de la variable dependiente, fue necesario realiza una correlación para definir si se debían trabajar con todos o discriminar alguno de ellos. De los modelos calculados se escogieron cuatro, los modelos planteados reflejan un buen ajuste mediante la prueba de Hosmer y Lemeshow, la capacidad de predicción del modelo SEIS resulta ser buena, prediciendo correctamente el 95,58 de 100 de los casos, la variable sexo en el modelo tuvo un p mayor a 0.05. This study aimed to elaborate on yacon flakes and determine the proximal composition of fresh yac... more This study aimed to elaborate on yacon flakes and determine the proximal composition of fresh yacon and final flakes, made at different temperatures (120°C, 150°C and 180°C) for 20 mins. We measured the acceptability of the sensory attributes: taste, texture, odour and colour and the global acceptability at the laboratory level, using semi-trained panellists and an unstructured hedonic scale. The acceptability of the flakes was measured at different temperatures. Our results indicate that the flakes made at 180°C had the highest acceptance (87%), and the flakes made at 120°C had 80% of unacceptability. Our data were analysed according to the analysis of variance (ANOVA) and Tukey's test. We found significant differences between the averages of the taste scores (T0:7.1; T1:7.6; T2:6.7; T3:4.6), p<0.05; texture (T0:7.1; T1:7.2; T2:5.7; T3:4.5), p<0.05; and odour (T0:7.2; T1:7.6; T2:5.1; T3:3.3), p<0.05. Methods: Analytical, experimental and prospective study. The population consisted of 56 male rats between 300 and 350 g, distributed in three experimental phases: Pre-pilot phase PPP (6 rats), Pilot phase PP (10 rats), and Experimental phase EP (40 rats). El estudio es de tipo descriptivo y diseño transversal con enfoque cuantitativo. Se trabajó con 46 productos dirigidos a niños entre 6 y 35 meses. La recolección se realizó de marzo a agosto del 2018 en supermercados y farmacias de la ciudad de Lima, Perú. A partir de la etiqueta nutricional del empaque, se obtuvo la cantidad de azúcar, sodio y grasa saturada descrita en su composición, esta información fue llevada a una tabla de Excel y, luego, al programa SPSS 23 para su análisis y comparación. La prevalencia de anemia en niños y niñas menores de 36 meses es más alta en la zona rural y en la sierra. A pesar de que Lima Metropolitana tiene una de las prevalencias más bajas del país (3 de cada 10 niños presentan anemia), concentra el mayor número de niños con anemia, con cifras similares al número de niños que obtenemos al sumar las cuatro o cinco regiones con mayor prevalencia en el país. Objetivo: Comparar los patrones de consumo de alimentos y practicas de alimentacion en ninos y ni... more Objetivo: Comparar los patrones de consumo de alimentos y practicas de alimentacion en ninos y ninas con y sin desnutricion en la zona rural de Lambayeque, Peru. Materiales y metodos: Estudio observacional, analitico de corte transversal Muestra randomizada de ninos entre 6 y 35 meses de edad. Se tuvo 239 madres, de la zona de Canaris en la region Lambayeque en Peru. Se desarrollo una encuesta para conocer los patrones de alimentacion a traves de un recordatorio de 24 horas, aspectos socioeconomicos y de desarrollo del nino. Resultados: Los ninos sin desnutricion consumen mayor cantidad de productos lacteos a la edad de 25-36 meses en comparacion con los ninos con desnutricion (13,5% vs 3.8%), respectivamente; P<0,05. El consumo de frutas o verduras enteras y en jugos es muy bajo en todos los ninos. En todos los grupos de edad (1-5, 6-12, 13-24, 25-36 meses), con y sin desnutricion se observa que consumen mas cereales y menestras. Conclusiones: Estos hallazgos identifican areas p...
