Meat and meat based products are becoming more prevalent all over the world. Fresh meat has an id... more Meat and meat based products are becoming more prevalent all over the world. Fresh meat has an ideal configuration for the development of a huge variety of microorganisms that causes spoilage. Thus the application of any natural compound having pronounced antimicrobial activity may be beneficial for sustaining meat quality and prolonging its shelflife. Curcumalonga belongs to Zingiberaceae family. The most imperative fraction of turmeric is named as curcuminoids. Among curcuminoids, Curcumin is mostly accountable for all biological activities of turmeric. Keeping in view the antimicrobial effect of turmeric, the present review will help the readers to understand antibacterial activity of different extracts of Turmeric (Curcuma longa) on meat samples and their antimicrobial potential on various pathogens.

Disease preventive role of turmeric and other plant foods is due to the bioactive components such as phenolic acids, tannins and flavonoids. For the current study, antioxidant activity of turmeric extracts was investigated against DPPH free radical scavenging activity. Proximate analysis and total phenolic contents of ethanol, methanol and water extracts of turmeric were also carried out. The total phenolic content (TPC) means related to three solvents at their different concentrations i.e. Ethanol (60%), Ethanol (80%), methanol (60%), methanol (80%) and aqueous extract were 678.76 mg GAE/ 100 g, 745.76 mg GAE/ 100 g, 523.87 mg GAE/ 100 g, 682.43 mg GAE/ 100 g and 496.76 mg GAE/ 100 g respectively. Turmeric (Curcuma longaL.) is a popular natural drug, traditionally used for the treatment of a w... more Turmeric (Curcuma longaL.) is a popular natural drug, traditionally used for the treatment of a wide range of diseases. Its root, as its most popular part used for medicinal purposes, contains different types of phytochemicals and minerals. This review summarizes what is currently known on biochemistry, safety, pharmacological activities (mechanistically), and clinical applications of turmeric. In short, curcumin is considered as the fundamental constituent in ground turmeric rhizome. Turmeric possesses several biological activities including anti-inflammatory, antioxidant, anticancer, antimutagenic, antimicrobial, antiobesity, hypolipidemic, cardioprotective, and neuroprotective effects. These reported pharmacologic activities make turmeric an important option for further clinical research. Also, there is a discussion on its safety and toxicity.

Different properties have been attributed to this group of marine products ranging from anti-allergic to anticancer activity. Mechanism of action is not obvious for all these properties, but there are some explanations for such effects. Objective: The aim of the current study was to review the phlorotannins and to assess the beneficial uses in medicine. Nutritional deficiency is a major concern in developing countries, resulting in serious health co... more Nutritional deficiency is a major concern in developing countries, resulting in serious health consequences like mental and physical growth retardation. Moringa oleifera (Moringa), a nutritious plant growing in tropical regions of developing countries, is a candidate for overcoming nutritional deficiency. Moringa leaves are rich in protein including sulphur containing amino acids. It contains high amounts of vitamin C than oranges, a higher concentration of vitamin A than carrots, higher calcium content than milk and more potassium than bananas. Moreover, there is 9 times more iron in moringa than spinach and 4 times more fiber than oats. This review enlightens and explores the nutritional diversification of Moringa oleifera and other benefits which make it a better choice to use in our daily diet to combat malnutrition.

Multiple experimental and clinical studies have investigated anticancer effects of honey with promising results. This study focused on potential background mechanisms of this effect. METHODS The current literature was reviewed for potential anticancer pathways which are suggested for honey and its ingredients. RESULTS Flavonoids (kaempferol, catechin, and quercetin) and phenolic acids (caffeic acid and gallic acid) are the most important ingredients of honey with known anti-cancer activity. The main suggested mechanisms for anti-cancer activity of honey and its ingredients are antioxidant, apoptotic, tumor necrosis factor inhibiting, antiproliferative, immunomodulatory, anti-inflammatory and estrogenic effects. CONCLUSION This review collates the current scientific understanding on the mechanism of anti-cancer activity of honey.

Owing to the prevalence of numerous human ailments in current epoch, use of natural food in manuf... more Owing to the prevalence of numerous human ailments in current epoch, use of natural food in manufacturing of variant processed stuffs has captured the attention of researchers, quite considerably as they comprise of beneficial components. In this regard, utilization of plant derived enzymes is making its mark, attributable to their easy availability and resistivity to survive severe processing conditions i.e. temperature and pH. The purpose of the study was to extract protease from Carica papaya and Moringa oleifera leaves and cheese was manufactured by using different levels of extract concentrations as rennet substitute. Enzyme extract was subjected to protein content, milk clotting and proteolytic activity for the pursuit of its effectiveness in cheese preparation. Different cheese treatments were analyzed for their physicochemical, functional and sensory properties. Fat, moisture and protein contents showed highly significant (p<0.01) results in cheese. Whereas enzyme extract induced non-significant (p>0.05) effect on ash, acidity and pH values of cheese. Results showed that cheese manufactured by using papaya leaf extract i.e. T 3 and T 4 exhibited good chemical and functional attributes comparable to control i.e. T 0 (use of rennet). In conclusion, papaya protease proved to be a good plant coagulant with gigantic potential to replace rennet.

Natural antioxidants have gained immense prominence in recent era for their role in obviating the... more Natural antioxidants have gained immense prominence in recent era for their role in obviating the auto-oxidation of fats, oils and allied food products. Lycopene is categorized among the most anticipated food bioactive molecules owing to its antioxidant activity, which must be extracted from its sources in high quantities. Current project was aimed to compare the conventional (simple solvent extraction) and contemporary (enzyme aided extraction) techniques for lycopene extraction from tomatoes and its products (tomato paste and pulp). Solvent mixture of hexane and acetone (75:25) was applied in both techniques with the initial enzyme (pectinase) application in enzyme aided method. Lycopene content was detected to be significantly high in tomato paste among all the products (38.3%) and extraction was more striking through enzyme-aided method. Under optimized conditions, DPPH% of raw tomatoes (90.12%), β-carotene (2.74%) and TPC contents (40.29%) in tomato paste were documented high. Conclusively, enzyme aided method for lycopene recovery proved to be more efficient as compared to simple solvent extraction.
