Glucose comes from the food and is also made in liver and muscles. Blood carries glucose to all of body's cells to use for energy. Pancreas releases a hormone insulin, into blood. Insulin helps blood carry glucose to all body's cells. Glucose stays in blood and doesn't reach cells when body doesn't make enough insulin or the insulin doesn't work the way it should. Blood glucose levels increased and can cause diabetes or prediabetes. Prediabetes means that the amount of glucose in blood is above normal level but not high enough to be called diabetes. Chances of getting type 2 diabetes are higher with prediabetes. With some weight loss and moderate physical activity, the person can prevent type 2 diabetes. The person can even return to normal glucose levels, possibly without taking any medicines. [13] Diabetes is a group of metabolic diseases characterized by hyperglycemia resulting from defects in insulin secretion, insulin action, or both. Several pathogenic processes are involved in the development of diabetes. [3] The prevalence of type 2 diabetes has risen steadily in recent decades, and type 2 diabetes is now a global health problem. Diabetes causes greater morbidity and mortality. There is increased concern about prevalence of type 2 diabetes in Arabic countries especially Saudi Arabia. [7] Therefore, the current study designed to determine the prevalence of diabetes mellitus among female students in University of Hail; study the association of diabetes mellitus in relation to obesity and using of BMI as a diagnostic tool in the current classification system for obesity.

This study depends on converting food processing waste into highly valuable products. Optimizing the fermentation conditions for enhancing high phytase production with low cost was the objective of this research. Chitosan is considered the most promising material for future applications. The purpose of this study was to highlight the antimicrobial and hepatoprotective properties of Chitosan nanoparticles (CTS), as well as their efficacy against multidrug-resistant pathogens and various applications as a natural antioxidant in the biomedical field. CTS were prepared with or without surfactant (L—lecithin, Tween 80) based on inotropic gelation of chitosan with sodium alginate. The nanoparticle obtained displayed a spherical shape with a particle size ranging from 54.3±20.8 to 1256±16.8 nm, zeta potential ranging from 24±1.2 to 30.8±1.1 mV, and polydispersity index ranging from 0.274±0.09 to 0.553±0.06. One third of adults the United Saudi Kingdom (U.S) eat fast foods. About 7% of American report eating fast food every day, certain groups are more likely to be more frequent users. Youth are the biggest consumers; adolescents and young adults get 20% and 31.5% of their total daily calories from fast food, respectively. When fast foods frequently replace nutritious foods in diet, it can lead to poor nutrition and poor health in digestive and cardiovascular systems, respiratory system, and central nervous system. The effects of fast food on the body are related to the formation of excess free radicals. These free radicals are a kind of cellular "exhaust" a by-product of metabolism. Free radicals are produced as cells use oxygen to convert the food into energy. The body is designed to deal with these free radicals. It has highly efficient ways of grabbing and neutralizing these renegade particles before they can do harm. The free radicals that occur naturally within the body didn't cause damage, but the excess of the free radicals is the cause of life-shortening damage. This extra load results from two key factors: an overabundance of toxins and a shortage of antioxidants. Antioxidants is the key to prevent the damage of free radicals by neutralizing their effect to prevent them from harming the body. The purpose of this review is to highlight the three main areas of research, which are interlinked. Study involving fast foods, free radicals and antioxidants. So, the objective of this study was to study the harmful effects of fast foods which related to the formation of excess amount of free radicals and provide a better insight into the mechanisms of antioxidants in prevention the damage of free radicals on the body.

In recent years Coconut oil is receiving attention as a Functional food oil and its consumption has dramatically risen. Coconut oil has been claimed to have beneficial effects on health. There are rarely published studies from Saudi Arabia exploring the awareness about benefits or risks of coconut oil. The objective of the present work is to evaluate the knowledge of students of Hail University about the effects of coconut oil on health with a comparison between females (scientific and Literary College) and males (scientific and Literary College). Also, this report aims to review the available literature about benefits and risks of coconut oil consumption and highlight its positive effects on health. Results of the present study was concluded that students of University have a moderate knowledge about effect of coconut oil on human health but the knowledge of female students more than male students. Comparison between students of scientific College and Literary College in level of knowledge about healthy importance of coconut oil show a none significant difference in all questions. The present work concluded that coconut oil is the best oil for health and reported the need to increase the knowledge of students about beneficial of coconut oil by distributing booklets or by health education program to highlight its positive effects on health and correct their thinking that coconut oil is harmful.

A few studies have documented allergic reactions with chocolate in children. It was found that Chocolate had harmful effect on heart and caused heart burn due to its content which cause relaxation of oesophageal sphincter muscle and permits entrance of stomach acidic contents to the oesophagus. Recently, chocolate products have attracted the attention of many researchers because of their nutritional and medicinal Properties. There are rarely published studies from Saudia Arabia exploring the awareness about benefits of chocolate consumption. So, the present study was conducted with the objectives of evaluating the knowledge about benefits of chocolate consumption among students of Hail University in Saudia Arabia. A survey was planned to evaluate health knowledge about biochemical effect of chocolate consumption on human health among females and males of Hail University in Saudia Arabia through a previously standardized questionnaire for questions related to their dietary habits, preferences, knowledge about benefits of chocolate consumption, its benefits effect on health, types of chocolates and frequency of consumption along with self-reported height and weight. Results of study reported the importance of increasing information about health benefits of chocolate consumption to correct people's thinking that the chocolate is harmful. Also, the current study compared between females and males of Hail University in their knowledge.
