ABSTRACT With this study, it was aimed to form a breeding schedule, suggesting to weaning the cal... more ABSTRACT With this study, it was aimed to form a breeding schedule, suggesting to weaning the calves at 35 days age and at the most suitable live weight. Brown Swiss calves weaned at 35 days age were separated into three groups. Calf groups which gained 10-20, 21-29 and 30-50% live weight based on birth weight at weaning time were named as G1, G2 and G3, respectively. The average weight gain of the groups between birth and weaning periods, were obtained as 15.2±1.9, 25.9±2.4 and 40.3±1.9%, respectively (p = 0.00). The effects of the groups on daily weight gains in the periods between birth and 6 months were found insignificant (p = 0.11). Similarly, the effect of the groups on total gains in body measurements in the periods between weaning and four months were also found insignificant. As a result, the growth performance of the Brown Swiss, weaned with gaining averagely 15.2, 25.9 and 40.3% weight compare to their birth weight, at 35 days age, were found similar.

This study was carried out to determine cattle breeders' farm management and calf raising pra... more This study was carried out to determine cattle breeders' farm management and calf raising practices in Narman county of Erzurum province. For this purpose, some data were obtained by conducting a face to face survey study with 208 producers in Narman county. Just 13,5 %of breeders who participated in the survey stated that they kept records of their animals regularly. 59 %of the cattle breeders indicated that they were in the need of technical assistance about cattle rearing, and 31%of them who needed assisstance got this knowledge through College of Veterinary. In most of the enterprises (43%), breeders based on all of the general signs of heat and cows in the 83%of the enterprises cows are inseminated in the first heat after birth.While 66%of the breeders used artificial insemination, 97%of breeders who used this method claimed that they were happy with this practice.It was determined that in 47%of the enterprises colostrum is not offered to new-born calves. The effects of blade tenderization (BT) on some of the quality characteristics of longissimus dor... more The effects of blade tenderization (BT) on some of the quality characteristics of longissimus dorsi (LD) and semimembranosus (SM) muscles from the carcasses of mature ewes were evaluated in this research. Values describing panel tenderness (P~0.01) and residue after chewing (P~0.05) were significantly improved by BT. Also, the number of chews before swallowing was significantly reduced (P~0.01) in the tenderized samples. The LD muscle had a significantly better (P 1 0.01) panel tenderness score and number of chews value than the SM muscle. BT influenced significantly (P~0.05) the initial yield force values of the Instron Warner-Bratzler test, which were 5.42B0.40 kg and 6.45B0.42 kg for tenderized and non-tenderized samples, respectively. Peak force and work done values were also significantly (P~0.01) affected by BT. The LD muscle had a lower peak force value (5.88B0.39 kg vs 7.06B0.43 kg) than the SM muscle. However, other Instron Warner-Bratzler test parameters were not significantly (P 1 0.05) affected by muscle type. The chewiness, hardness, peak force 2 and work done 2 values determined by the Instron compression test were significantly affected by muscle type. Also, BT resulted in lower values for chewiness, hardness, peak force 1 and 2, and work done 1 and 2 values, but the differences between tenderized and non-tenderized samples were not statistically significant (P 1 0.05).

This study aimed to investigate the effects of slaughter age (young vs. old), muscle type (Longis... more This study aimed to investigate the effects of slaughter age (young vs. old), muscle type (Longissimus dorsi (LD), Gluteus medius (GM)) and fat deposits (kidney knob and channel fat, subcutaneous fat, intramuscular fat) on chemical, organoleptic, textural characteristics and fatty acid composition of Holstein Friesian bull meat. For this purpose, the carcasses of 26 Holstein Friesian bulls that had been fattened on the same private farm were assigned to two experimental groups based on their age at slaughter: a young group (YG) (average age: 17.0 ± 1.0 months old) and an old group (OG) (average age: 22.0 ± 1.0 months old). The percentage of crude protein, panel tenderness score, polyunsaturated fatty acid (PUFA) and saturated fatty acid (SFA) content, the PUFA/SFA ratio and the hypocholesterolemic fatty acid (DFA)/hypercholesterolemic fatty acid (OFA) ratio of the bull carcasses decreased significantly with increasing slaughter age. Bu çalışma, Erzurum ili Aşkale ilçesi sığırcılık işletmelerinde bulunan barınakların yapısal özel... more Bu çalışma, Erzurum ili Aşkale ilçesi sığırcılık işletmelerinde bulunan barınakların yapısal özellikleri ve bu özelliklerle ilgili sorunları belirlemek amacıyla yürütülmüştür. Bu amaçla, şansa bağlı olarak seçilen 221 işletme sahibi ile yüz yüze anket yapılmıştır. İşletmelerin %52.0'sinin bağlı duraksız kapalı ahırlardan oluştuğu, %34.7'sinin ahır bina yaşının 10 yıldan daha az olduğu ve ahırların genellikle müstakil (%77.4) olduğu belirlenmiştir. Aşkale ilçesinde hayvanlar için gezinti alanı olan işletme oranı %16.7 ve gübre depolayan işletme oranı ise %13.4 olduğu saptanmıştır. Sonuç olarak Aşkale ilçesinde yeni yapılacak ahırların modern bir şekilde inşa edilmesi, mevcut ahırların iyileştirilmesi veya modernize edilmesi ve gelecekte yapılacak ahırların büyükbaş hayvanlar için ihtiyaçlarını optimum düzeyde karşılayacak seviyede ve hayvan refahını sağlayacak yeterlilikte olması ilçede yetiştiriciler için daha karlı bir üretim süreci sağlayacaktır.

Veriler 2 (Ki-Kare) testi ile değerlendirilmiş ve işletmelerde bazı hastalıkların görülme oranları tespit edilmiştir. In 1966 the United States produced 1.2 million tons of peanuts valued in excess of $300 million. Peanuts rank third or fourth in the economy of Virginia, North Carolina, Georgia, Alabama, and Oklahoma, but sixth in Florida and seventh in Texas. Peanuts are one of the six basic agricultural crops in the United States. In order to satisfy the consumer, the peanut product must have optimal organoleptic attributes. Peanut yield and quality are greatly influenced by time of digging. The average number of days required to reach maturity for any specific variety will vary considerably from year to year and from field to field. Therefore, the farmer determines maturity based on the color of the kernel skin as well as on internal and external pod characteristics. Marketing quality is determined on a similar basis, but there are no specific rules which apply to all conditions. Peanut flavor can be affected by moisture content, oil content, free fatty acid content, reduced sugar content, quality of the oil, maturity and texture. Various methods of drying may greatly affect these attributes. Different combinations of the above characteristics may produce a change in specific volume that could be used as a basis for separation in an airstream. Literature Review Extraneous and objectionable flavors in peanuts can arise from many sources and are not always attributable to the harvesting and drying processes. Bailey Paper No. 68-381 was presented at the Annual Meeting of the American Society of Agricultural Engineers at Logan, Utah, June 1968, on a program arranged by the Food Engineering Div.

Effect of tethered and free-stall housing systems on the fattening performance of Holstein Friesi... more Effect of tethered and free-stall housing systems on the fattening performance of Holstein Friesian bulls at two different ages. J. Appl. Anim. Res., 22: 91-95. Fattening performance and feed efficiency ratio characteristics of young Holstein Friesian bulls housed in free-stall or tie-stall barn at two different age groups i.e. 9-12 months and 14-17 inonths of age were investigated. A total of 19 Holstein bulls were fattened for 142 days. Adjusted average final weights of the young bulls kept i n free-stall aiid stall barn were 395.50 aiid 404.95 kg, respectively. Average total weight gain of the bulls in loose housing systein was 4.7 kg, higher than those in tethered barn. The feed efficiency ratio values for free-stall systein was better than tethered barits. The free-stall housing systein might be successfully used without causing detrimental effect O I L the fattening performance of Holstein cattle.

The objective of this research was to investigate the influence of electrical stimulation (ES) on... more The objective of this research was to investigate the influence of electrical stimulation (ES) on the sensory and textural quality characteristics of mutton carcasses from elderly ewes. For this purpose, 14 ovine carcasses from 3-5-year-old ewes were subjected to ES with 350 V, and the effects of ES on the organoleptic and instron textural parameters were evaluated. The ES significantly (P < 0.01) improved the panel tenderness scores of the Longissimus dorsi (LD) muscle. Some of the Instron Warner Bratzler Shear parameters such as peak force and initial yield force values of the LD muscle were also highly significantly (P < 0.01) affected by ES, while the Semimembranosus (SM) muscle was not affected. Hardness and peak force 2 values of LD obtained from the Instron compression test were also significantly (P < 0.05) affected by ES. However, Instron compression parameters of SM muscles were not significantly influenced by ES treatment. The results revealed that the ES could considerably improve the tenderness of the LD from mutton carcasses. In conclusion, the application of ES to mutton carcasses from elderly ewes could be beneficial for the meat industry by increasing the merchandising value and quality of this sort of carcass.
