The final step in bread making is the baking process to produce the final attributes of product q... more The final step in bread making is the baking process to produce the final attributes of product quality, including texture, color, and flavor, as a result of several thermal reactions. These thermal reactions are dominated by heat and mass transfer mechanisms inside an oven chamber as well as inside the dough pieces. This research involves studying existing methods of baking bread in a common type of industrial oven. A simulation of the oven operating conditions and the conditions of the food moving through the oven is performed and analyzed using COMSOL, an engineering modeling design and simulation software. A 2-D axisymmetric mathematical model was developed in order to simulate coupled heat and mass transfer during the bread baking process and to predict bread temperature and water content at different oven temperatures (180, 200, 220, 240 and 260 °C). The aim was to detect effects of blue light on reducing the adverse effect of heat stress in thermal manipulation (TM) of broiler embryos by subjecting embryos to heat stress during incubation development. Methods. Eggs were assigned to four treatments in which the TM (thermal manipulation) was exposed to 40°C for 4 h daily during five successive days, if TM was operated. The treatments were (1) normal temperature with white lighting group (37°C+W), (2) normal temperature with blue lighting group (37°C+B), (3) thermal manipulation with white lighting group (40°C+W), and (4) thermal manipulation with blue lighting group (40°C+B). Results. Blue light significantly lowered MDA and corticosterone concentrations in the embryonic liver. Additionally, the damage of embryonic liver tissue caused by heat stress could be reduced by blue light. HSPs and HSFs gene expression of chicken liver were modulated by blue light significantly, whereas the effects were different, respectively....

We propose a new class of wave-phenomena in multiphase solids (and granular media) triggered by H... more We propose a new class of wave-phenomena in multiphase solids (and granular media) triggered by Hydro-Poro-Mechanical coupling and cross-diffusion feedbacks of porous materials. We define cross-diffusion as the phenomenon when a generalized thermodynamic force induces a generalized thermodynamic flux of another kind. Addition of cross-diffusion relaxes the adiabatic constraints on the reaction part of the system and corrects the mathematical ill-posedness. We identify the important aspect of cross-diffusion terms and present a linear stability analysis of the governing partial differential equations (PDE’s). Multiple transient wave instabilities are found as solutions of the coupled PDE’s. In the long-wavelength limit (long-time scale) these waves feed into solitary waves that are standing wave patterns frozen into the porous medium at various scales. We revisit earlier work showing that the wavenumber of the standing wave is entirely defined by the ratio of the mechanical over the fluid (self-diffusion) coefficients of the coupled reaction-cross-diffusion equations. Diffusion coefficients are hence identified as material parameters controlling the criterion for nucleation of waves and the signature of both transient cross- and stationary self-diffusion waves. We show examples of self- and cross-diffusion waves in nature and laboratory experiments as stationary and time-lapse diffusional waves. Our approach offers a simple mathematical framework for analysis of coupled hydro-mechanical porous medium, providing a new fundamental perspective for analyses of the initiation of macroscopic instabilities and transient precursors in many disciplines.
