I think I could eat this quiche every day for breakfast for the rest of my life.I got this recipe from Cooking Light magazine. I substituted a bit by using fat free cheeses and turkey bacon, removing the flour and baking powder and adding extra spinach and egg substitute.Please see my blog for the recipe :-)

I also cut five minutes from the cooking timeAlso, I made asparagus. The light Hollandaise recipe in the book goes well with that. I don't remember the exact wording though.

I've just started phase one again today, for about the 10th time. I love the South Beach Diet as every time, if I stick to the plan, it never fails me. Anyway, just wanted to get my new blog name out there. Of course, as I've been trying to turn this over to a more photo-oriented South Beach Diet recipe community. I'd gotten caught up in a relationship, a move and more career pressures and ended up putting South Beach on the back burner. But now, officially I am BACK!I'm thinking of changing up the community a little bit. With my other Lj account I'm a member of a Picturing Food community that I love but now that I'm back on the beach it's hard seeing pictures of non-healthy foods splashed all over my Friends' Page.So, I'm prompting people to take pics of their meals! It could be recipes you made, food you ordered at a restaurant, etc. Just post the pic and a brief (or not-so-brief, if you prefer) description of the food.Happy Posting!**

Hi everyone! This is not my first time on the diet-- every other time we have made a few of the lasting changes (I cannot tell you when the last time I ate white bread or a white potato was...) but always ended up scrapping the other parts of the diet after a few months. Well, we're feeling better about the whole thing this time around (we don't feel like we're giving up as much because we haven't been eating too poorly, just poorly enough to not lose weight...) At any rate, it does help that I now have 4 cookbooks to pull from. I really enjoy cooking and I love finding recipes that are not "diet" like. (In fact, we had friends over the other night and the male friend was skeptical of eating because he didn't want "diet" food. He was very happy with the meal!)**( Anyway, here's what we've especially liked over the last 10 days or so:Collapse )**All of the recipes came out of one South Beach Diet cookbook or another. I have recipe cards of all of these in Publisher, if you would like them. I won't be able to email them out until Monday, though. Oh! And all of the recipes, except the whole wheat bread, are phase one friendly. the bread, obviously is phase 2.

[**mood** |curiouscurious]Are beans like pinto, great northern, black acceptable on phase 1 of South Beach? I'm reading the new supercharged SBD book and there's recipes listed for phase 1 that includes these different beans. Just wondering if that's acceptable. Also..nuts. Are they a carb, a fat, or what? I know you can have them on phase 1, but since I started eating pistachios (and yes, I count them and never go over 30 a day) my weight loss has stalled. Also..has anyone noticed that some of the SBD diet meal bars and especially the one I noticed the chocolate pudding actually has palm oil and/or malitol in them? I don't think these are truly SBD friendly, but more a marketing ploy for Kraft. Anyway, any answers would be greatly appreciated.

[**mood** |satisfiedsatisfied]If you're like me and love sushi, then this recipie is for you! take crab meat ground up with a little mayo to make a spread (this will be used in place of the rice) small piece of tuna small piece of salmonstalks of steamed asparagus sliced avocado green soy wrappers (or I guess you could use nori as well) but I like thesePlace crab spread on soy wrapper or nori, place tuna and salmon in middle of spread. Layer a line of asparagus down the middle, and a line of avocado down the middle. Roll up into a roll and slice into sushi pieces. Serve with an appetizer of miso soup. Delicious! High in protein and Omega-3's!

Indian Spiced Chickpea & Fire-Roasted Tomato Soup [Jun. 17th, 2008|06:28 pm]South Beach Diet Recipe *and picture* Collection
Hey everyone! I know it's not really soup weather, but as it is "unseasonably cold" here in New York this week, this recipe from Rachael Ray's 30-Minute Meals sounded great for Phase 1...INDIAN SPICED CHICKPEA & FIRE-ROASTED TOMATO SOUP (phase 2 if you use Whole Wheat pita bread)Serves 41/4 cup extra-virgin olive oil, 2 turns of the pan 2 cloves garlic, chopped 2 cans chickpeas, drained 1 small onion, coarsely chopped 2 teaspoons ground cumin, 2/3 palm ful 1/2 teaspoon ground cardamom 1/2 teaspoon turmeric Salt and pepper 2 cups low-sodium chicken or vegetable stock 1 (28-ounce) can fire roasted tomatoes 1 cup plain low-fat yogurt Warm pita, any flavor or variety, toasted Heat a medium pot with extra-virgin olive oil over medium heat. Add garlic and cook 2 to 3 minutes. Grind the chickpeas and onion in food processor. Add to pot and cook 5 minutes to sweeten onion. Season the chickpeas with cumin, cardamom, turmeric, salt and pepper. Stir in stock, then tomatoes. Simmer soup 5 to 10 minutes to combine flavors. Serve with a dollop of yogurt and (if at Phase 2) warm pita for dipping.I've also posted this on the User Info page under "Phase 1 Soups & Stews" in case anyone wants to reference this later :-)
