This chapter limits the scope to the Algarve-Huelva connection and the resident population demand. The findings suggest a maritime connection defined and marketed as part of leisure activities. The demand for potential tourism packages created around boat trips appears to be promising. The sun beach, gastronomy wine and culture landscape vectors are the main attractors.

Research paper thumbnail of Food innovation towards a sustainable world: A study on intention to purchase lab-grown meat

However, although technological innovations in lab-grown meat are advancing, a better understanding is needed regarding the perspectives of potential consumers of this product. Specifically, whether the perceived higher environmental sustainability of this meat compared with conventional meat influences purchase intentions remains unclear. The effects of perceived risks must also be assessed. To address these knowledge gaps, we propose a model that draws on the theory of reasoned action and integrate it with potential consumers' perceptions of environmental sustainability and risks of lab-grown meat. We apply variance-based structural equation modelling using data from a sample of Italian consumers to evaluate the model's explanatory and predictive accuracy. The findings highlight the effects of environmental sustainability and perceived risks on purchase intentions and provide insights for policymakers and businesses.

Design/methodology/approach A sample from a population of start-ups, mainly Spanish, linked to the circular economy was gathered and analyzed; in addition to secondary data, a survey was designed and administered for the purpose of primary tourism industry data collection. Findings A holistic start-up ecosystem for circular tourism is taking shape, facilitated by interactions between tourism and other economic activities, with the aim of tackling a diversity of circular economic objectives. The interest from start-ups in the circular economy for tourism seems to be rising, with attention given to certain technologies in line with the trend toward digitization and automation processes. Nevertheless, the potential for growth in the application of Technology 4.0 remains significant. Finally, the circular principle of reduction (energy and food waste) has emerged as a key objective in tourism. Originality/value The article provides insights on the application of circular economic principles in tourism through its interaction with a specialized start-up ecosystem able to support a paradigm shift toward circular tourism.

Given the explorative nature of this research, a qualitative methodology is adopted, with a longitudinal case study employed as the research method. The Wråd case study confirmed that SMEs can contribute to the achievement of the SDGs by developing partnerships with multiple stakeholders. In addition, this research revealed that the characteristics of the SMEs' partners can be referred to the four following dimensions: economic, environmental, social and purpose. Furthermore, it proposed that quality utility value, technique level, profitability are the subdimensions of the economic dimension and that resource consumption efficiency, pollution production, energy efficiency, environment management system and environment equipment and facilities are the subdimensions of the environmental dimension. This research expressed also that public health, employee engagement, brand reputation and local communities' influence are the subdimensions of the social dimension. Finally, it underlined that sustainability-oriented awareness development, sustainable orientation, sustainable collective culture, proactive managerial skills, organisational learning and proactive and innovative leadership are the subdimensions of the purpose dimension. In line with previous studies underlining the importance of increasing the TBL dimensions, this study suggests a further extension of this theory with the 'purpose' dimension. This study highlights the importance of developing a vision supported by a social awareness of the problems that need to be addressed and that transcend the fashion sector. Further researches could explore a larger sample of SMEs operating in different businesses and the point of view of the SME's partners.

Research paper thumbnail of 12 Revisiting tourism crisis management practice: Learning from COVID-19 in Spain

De Gruyter eBooks, Dec 6, 2021

Since the publication of the seminal work by Faulkner (2001), various models have studied how to ... more Since the publication of the seminal work by Faulkner (2001), various models have studied how to deal with crises (Heath, 1998; Ritchie, 2004; Wilks & Moore, 2004). There has been ample consensus regarding approaching crisis management from a strategic perspective, emphasizing crisis preparation and planning (Burnett, 1998; Paraskevas & Arendell, 2007) with a proactive/anticipatory focus. Indeed, crises are often unpredictable when it comes to where, when, and how they occur, but it is no less true that planning lays the foundation for a faster, coordinated, and effective response (Fink, 2002). The interest in providing more elements of strategic content is aimed at providing crises managers with a higher responsiveness capacity (Rodríguez-Toubes & Fraiz Brea, 2012), although, as stated by Ritchie and Jiang (2019, p. 2), "existing tourism crisis and disaster frameworks have not been suitably tested despite their long existence." Among them, perhaps the most intuitive one is the 4Rs model by Wilks and Moore (2004), which incorporates the phases of reduction, readiness, response, and recovery with actions such as policies for monitoring and surveillance, planning, procedures for emergency responses, communication and audits (Jordana, Frieta, & Agbaba, 2020). Organizations located in tourism destinations that have suffered previous crises have accumulated experiences that should help them to cope with future crises. As long as a process of suitable learning has taken place, they can nurture the knowledge base necessary for the development of the above-mentioned phases. In this line, this chapter analyses the extent to which the models used up to now, particularly Faulkner's model, are applicable, bearing in mind the peculiarities to be considered and the variables to be introduced from the perspective of organizational learning. Specifically, three elements are studied: 1) the identification of the potential risk factors (risk scenarios and impacts); 2) the indicators or alarm signals and their monitoring; and 3) the preparation to respond to an unprecedented crisis that has cut off tourism activity worldwide. This study has focuses on Spain and the COVID-19 pandemic. The importance of tourism in this country is outstanding, and the sector has significant experience in crisis management in areas such as terrorism, crime, and disasters, such as fires and oil spills. However, unlike other countries in Asia, Africa, and South America, the impact of epidemics is rare and until now has hardly been deemed a risk factor. Despite being one of the most affected countries in the world, the aim of this work is not focused on showing the situation of the tourism sector in Spain as a result of the crisis

This study analyzes the interaction between tourism entrepreneurs and the public sector in the tourism public policies, studying the city of Huelva, Spain, which is in early stages of tourism organization and with significant public sector interaction with entrepreneurs. From a theoretical framework linking neocorporatism, collaborative governance and institutionalism with public policies tourism, we ran interviews with three leading public sector representatives and seven leading entrepreneurs of the cit. Analysis through Grounded Theory showed that entrepreneurs and public sector recognized their mutual dependence. The public sector strives to minimize the costs of its bounded rationality about business issues, while entrepreneurs strive to increase destination promotion and infrastructure. Finally, the variables path dependence, activities of entrepreneur's associations, beliefs, and internal interaction (between entrepreneur and between public sector organizations) also emerged as relevant in the interaction between tourism entrepreneurs and the public sector.
