HOW TO IMPROVE CONSUMER'S PERCEPTION OF STREET FOOD QUALITY ?

In periods of economic contingency, imposing to families the loss of their sources of income, or even because of migratory and immigration movements, the street food trade is one of the alternatives for the recomposition of family income. ln this context, street food trade stands out and grows in importance for its economic, social and cultural aspects. Most research on this theme has aspects related to health issues and few of them explores questions about the factors that influence the perception of the consumer in relation to the quality of food eaten, which is the focus of this work. Data were collected through a printed questionnaire from 253 persons walking around several busy areas of Diadema city, Brazil, a city with intense street food trade activity. The statistical approach was performed by multivariate data methods to evaluate the consumers‘ perception of street food quality based on corn and by-products sold. Findings showed that service directly influences quality perception. Additionally, it was possible to verify the mediating effect of healthiness in the relationship between cleanliness and quality perception. Therefore, the focus of street food traders should be on clerk cleanliness and politeness. Both of them influence the perception that the consumer develops regarding healthiness and quality.
Fulfilment of technical and hygienic requirements among street food vendors in Slovenia

PurposeThis cross-sectional study aimed to evaluate the compliance of hygienic and technical standards of street food vendors in Slovenia with the requirements of the general hygienic food principals set in the Codex Alimentarius and Regulation (EC) No. 852/2004 on the hygiene of foodstuffs.Design/methodology/approachFood vendors were observed directly and discretely using a semi-structured observation sheet that allowed fast evaluation. The employee's behaviour was not affected during the observations because they were not aware of being observed. Each observation lasted approximately 30 min. The market "Las Manuelas" located in the canton Duran, Guayas province is the subject of this research, this market is new in its location, has a modern infrastructure design, but there is a paradigm about the municipal markets maintain poor hygiene, lower than supermarkets and this condition affects the experience of customers and consumers. This research aims to determine the association between the cleanliness of the "Las Manuelas" market and the experience of its consumers. Survey technique was applied for data collection and the Somers coefficient was used for statistical analysis through the SPSS 22.00 program. Unsanitary environment, the lack of awareness of food safety regulations, poor knowledge of hygiene and improper food handling practices among the food vendors can contribute to outbreaks of foodborne illnesses. This study aims to investigate the food safety knowledge and practices of street food vendors and to assess the sanitary conditions of street vended foods of Tarlac State University, Main Campus. This research paper focused on the investigation of customer perception in the context of hygienic street food in the case of Bangsean City, Thailand. Three variables have been analyzed in this valuation as follows: food hygiene practice, service and sanitation operation, and street food atmosphere. Regarding research methodology, the authors used a quantitative approach to testify on an Exploratory Factor Analysis (EFA) and Linear Regression Analysis. Particularly respondents were collected by distributing four hundred questionnaires to Thai citizen tourists who had recently visited the town with consumed street food in a place. As a result, indicated that customer perception positively affected customer satisfaction. Simultaneously, customer satisfaction positively affected customer loyalty. Moreover, the finding can be justified by a new persuasive method of contribution for the street food vendors in terms of hygiene conditions, in order that enhances the quality of food, service and sanitation operation advancement, and build-up an atmosphere which are the factors affecting to the customer's perception.

Foods and beverages which are prepared and sold by the sellers on places like streets, festival areas and consumed by the consumers on the run are known as street food. These foods are alternatives to homemade food and are more affordable when compared with the food supplied at the restaurants. The areas where the street food are mostly critised and seen as a threat for health are that the places where they are produced and sold are open to dirt and contamination and that hygiene, attitude, and applications adopted by the sellers during the preparation and storage of the food are insufficient. As a descriptive research, this study aims to provide information on street food consumption with general specifications of street food, the reasons why they are preferred, and general conditions like hygiene, quality, and safety.

This research examined the impact of the food hygiene perception of street food customers on their purchase intentions and its mechanism driven by their trust and perceived risk under the influence of the COVID-19 pandemic. Cross-sectional data collected from 571 street food customers in Bangkok were computed using partial least squares structural equation modeling (PLS-SEM). The results revealed a significant positive and direct influence of perceived food hygiene on customer purchase intentions (β=0.211; p<0.001). It also drove customer trust (β=0.726; p<0.001) and reduced perceived risk (β=-0.215; p<0.001). Customer trust was found to have a positive impact on purchase intentions (β=0.366; p<0.001), while perceived risk was negatively associated with purchase intentions (β=-0.264; p<0.001). In addition, the results confirmed a negative impact of customer trust on perceived risk (β=-0.371; p<0.001). Therefore, Sobel's test results demonstrated partial positive moderations of customer trust (t= 8.211; p<0.001) and perceived risk (t= 4.066; p<0.001) between perceived food hygiene and purchase intentions. Finally, perceived was also found to partially and positively mediate between customer trust and purchase intentions (t= 5.289; p<0.001). This study provided novel and additional knowledge and evidence in the literature. It can also be applied as a guideline for street food operators and relevant governmental agents to raise the standard of street food sustainably under the influence of the COVID-19 pandemic.
