Acharya Charaka describe that the whole world runs towards food, as complexion, happiness, pleasant voice, life, talent, health and satisfaction, maintenance of body, body strength and even intellectual capacities of the individual depends on food. Since from Vedic period they gave importance to the food. In Upanishad food is considered as Brahma. Food is a substance consumed other than water and drugs for maintenance of the health, well-being and vitality of the individual. Present paper highlights the importance of Ayurvedic nutrition in the form of Nitya Sevaniya Ahara Dravya and critical analyses on the importance of it in day today life.

Food is vital to life as is air and water. Modern science has described a lot about the various aspects of food, its quality, quantity etc. as should be adopted by a person. Ayurveda has described about the importance of food in even greater detail stating it to be one of the three aspects a person should focus upon, for the maintenance of healthy life [along with Nidra (sleep) and Bramhacharya or Abramhacharya (abstinence or controlled indulgence in sexual practices)]. This is so because Ayurveda describes food to effect not only our physical health, but also our psychology and mental health. Keeping in view its importance a whole lot of description is available scattered in the texts, regarding the various qualities and principles governing the food intake. This article examines the various principles in Ayurvedic Samhitas, describing the quantity as well as the quality of food which should be consumed and evaluates these principles scientifically for their acceptance in the present society.
Critical analysis of dietetics in Ayurveda

Dietetics is the science of diet and nutrition. It is the branch of therapeutics concerned with the practical application of diet in relation to health and disease. Diet is prescribed for both health of the individual as well as diseased person. For healthy individual diet depends on Prakriti of the person and for diseased person it depends on the Doshapradhanyata of the disease. The treatment principle in Ayurveda is mainly based on preventive aspect first, rather than curative. Aahara is considered as the first pillar among Ahara,Nidra and Brahmacharya. Many common health problems can be prevented by following Ahara Vidhi Visheshayatana, rules of Aharasevana, Patya-Apathya of the disease so on. Upayoga Niyama (Dietary Rules) in Ayurveda: A Critical Review

As per Ayurveda, 'food is the medicine if it consumed properly'. Ingestion of food which is uniquely suitable to the physiology with prescribed dietary rules enhances the ones physical, mental and spiritual strength. Ayurveda is the science of life and the term prana (life) used for ahara itself indicates its due importance. Acharya Sushruta defines a healthy person as one in whom there is perfect balance of all bodily functions with equilibrium of the mind, senses and spirit. Only suitable ahara is not able to provide the health but certain other factors execute the prime role. Acharya charaka has elaborated these factors under the heading upyoga niyama (dietary rules). These dietary rules play crucial role in the digestion process, maintenance of equilibrium of doshas and dhatus and to bestow the strength to mind and sense organs. In this article we discuss the role upayoga niyama with their logical interpretation.
Role of Diet in Ayurvedic Treatise as Perceived by Ayurvedic Doctors
Ayurveda is a component of health care having a traditional system of medicines. The basic principle of Ayurveda is to prevent illness by maintaining balance in the body, mind, and consciousness through proper drinking, diet and lifestyle, as well as herbal remedies. A study on the role of diet in Ayurvedic treatise was undertaken. An attempt was also made to find out the existing diet counseling practices, barriers and suggestions for improvement. For the purpose, fifty Ayurvedic practitioners serving in two government Ayurvedic hospitals of Udaipur city Rajasthan were selected. The information was collected with the help of an interview schedule. Majority of the respondents were of the opinion that diarrhea, hypertension, peptic-ulcer, tuberculosis, hepatitis and typhoid are the diseases for which the diet-drug therapy is the most appropriate mode of the treatment where as obesity can be cured by dietary modifications coupled with physical exercise. All the Ayurvedic doctors agreed with need for improving nutrition counseling practices and recommended to include more nutrition courses in Ayurvedic curriculum and need for appointing dietitian in Ayurvedic hospital was also suggested.
Historical Perspectives of Nutrition Science: Insights from Ayurveda

Nutrition is the science that interprets the interaction of food in relation to maintenance, growth, health and disease of an organism. The history of nutrition science and dietetics can be traced back as far as history of civilization across the world. The food habits, cooking and food processing have been evolved with cultural development of human beings. The ancient physicians from Greek, Hippocrates, Galen, Plato, Chinese civilization and Indian physician of Ayurveda like Charak and Sushruta have duly recognized the importance of diet and dietetics along with physical activity in health and management of various disorders. Although the advancement in nutrition science has added the discovery of various micronutrients and fortified food substances, still a large number of populations worldwide is suffering from disorders of malnutrition, food-borne diseases, neurotoxins and other non-communicable diseases due to wrong cooking, storage, packaging practices and intake of food in wrong combination. Ayurveda has advocated that to get the optimum benefits from the consumed food (Aahara), people should give due consideration to their psychosomatic constitution (Prakriti), state of digestive power (Agni), age, dietary rules, nature and combination of food etc. It is very surprising fact that scientific development of nutrition science was started in between 18 th and 19 th century, but the researchers and academicians working in the field of nutrition and medicinal health science have not incorporated the valuable, time tested knowledge of Ayurveda, which could be applied for development of nutrition science, and will be helpful in treatment of diseases and maintenance of health too.
DIETOLOGY IN TRADITIONAL AYURVEDA MEDICINE
In modern conditions the traditional Ayurveda medicine can play an important role in comprehension of nutrition science generally and in particularly medicine. The demands, shown to nutrition rules in medical practice, are described from the point of view of Ayurveda medical tradition. Food is considered to be the path of health and salvation. Desire of food, easy digestion of ingested food, proper excretion of feces, urine and flatus, lightness of body, longevity and happiness are known to be features of health. Health is dependent upon food and the food looks for proper method. In the present era, everyone wants to know only about tasty food, but people are not much aware of the rules of food preparation, rules of proper intake, and proper utensils for food intake, etc. Practicing appropriate diet-regimen, pertinent demeanor, appropriate sleep and wake up makes a person devoid of distress. In this way a vast description of salutary diet regimen is available in the treatise of Āyurveda. This paper deals with the use of utensils and methodology of food intake mentioned in Kaśyapa Saṃhitā and other Ayurvedic scriptures.
The role of diet regimes in preventive and curative aspects is one of the ancient Indian pre-medicated nutraceutical practices (Pathya kalpana-Ayuceutical) of Ayurveda since thousands of years. Numerous pharmaceutical procedures (Samskara) applied on raw food items to enrich the nutritional value, maintains the Doshas (Specific provocated humours), Dhatus (basic elements) in a well balanced condition. Pathya kalpana endorses the homeostatic stability of cellular metabolites (Dhatus) to maintain health and avert for ailments. Thus, pathya as adjuvant used with the therapies aid to renovate the cellular mechano-bio equilibrium. In tribal community, food items are prepared from rice, maize, millets etc. ingredients in their ritual just similar to the Pathya kalpana regimen. Present era is familiar to the benefits of nutraceuticals, medicinal food and functional foods etc are also the advance forms of ancient nutritics. To deal up with this, literature related to Pathya kalpana has been surveyed from Vedic period till recent era publications and presented concisely here. The basic objective of this review paper is to amalgamate the traditional and tribal knowledge of diet with therapeutic utility with contemporary products known as functional and medicinal food. After going through this fundamental information's, any keen interested person or researcher may pave a direction to further reinforce this ancient nutraceutical dosage form.
