Proximate composition and mineral content of five species of edible mushrooms namely Pleurotus ostreatus, Pleurotus sajor-caju, Pleurotus florida and Pleurotus HK- 51 belonging to the family: Pleurotaceae and genus: Pleurotus and Calocybe indica belonging to the family: Tricholomataceae and Genus: Calocybe have been analyzed.Crude protein, total lipids, available carbohydrates, dietary fiber and total carbohydrates content in mushrooms were found to be in the ranges of 3.22-4.83, 0.41-1.05, 4.2-6.37, 0.58-1.11 and 4.82-7.48 g per 100g of fresh edible portion(EP) respectively. Moisture, total solids and ash content were found to be in the ranges of 85.95-90.07, 9.93-14.05 and 0.98-2.3 g/100g of fresh EP respectively. Where as total calorie values in mushrooms were found to be in the ranges of 35.51 - 50.03 Kcal / 100g fresh EP. Mushroom cultivation has been started recently in Bangladesh. Awareness of the nutritional and medicinal importance of mushrooms is not extensive. In this study, the nutritional values of dietary mushrooms- Pleurotus ostreatus, Pleurotus sajorcaju, Pleurotus florida and Calocybe indica that are very popular among the cultivated mushrooms in Bangladesh have been determined. These mushrooms were rich in proteins (20~25%) and fibers (13~24% in dry samples) and contained a lower amount of lipid (4 to 5%). The carbohydrate contents ranged from 37 to 48% (on the basis of dry weight). These were also rich in mineral contents (total ash content is 8~13%). The pileus and gills were protein and lipid rich and stripe was carbohydrate and fiber-rich. The moisture content of mushrooms ranged from 86 to 87.5%. Data of this study suggest that mushrooms are rich in nutritional value.

Four edible mushroom species (Pleurotus ostreatus, Agaricus bisporus, Volvariella volvacea, Ganoderma lucidum) from different locations of Bangladesh, were analysed for their protein and metal content profile (K, Na, Fe, Cu, Zn, Mn, Cr, Pb, As and Cd). Trace metals were determined by atomic absorption spectrophotometer, Na and K by flame emission spectrophotometer and protein by micro Kjeldhal method. All element concentrations were determined on a dry weight basis. The protein content of mushrooms varied from 13.8%–34.3% and the metal content of samples ranged from 0.54–2.25% for K and 12.6–81.6, 69.5–626.2, 39.2–163.4, 30.1–75.5, 52.9–104.5, 0.20–0.30, 0.13–0.59 µg g-1 for Na, Fe, Cu, Zn, Mn, Cd, Pb, respectively. Arsenic and cadmium concentrations were below the detection limit of the method used. The detection limits of the method for As and Cd are 0.01 µg g-1 for each element. In general, K and Fe content were higher than other metals in all mushroom species. The levels of Cu and Zn in some mushroom samples were found to be higher than legal limits.

Holy city Ayodhya is situated at the bank of river Saryu and has a vast diversity of macrofungi, especially mushroom mycoflora. Some of which are excellently edible and cultivable. Characterization and nutritional composition of four selected cultivable naturally growing mushrooms viz. Agaricus bisporus, Pleurotus ostriatus, Volvariella volvacea and Calocybe indica from different sites of study area (Ayodhya) were evaluated. Macroscopic and microscopic characteristics expressed with natural photographs. The proximate analysis of nutritional values was done by encountering complete mushroom samples that were shade dried, powdered and processed. The macronutrients profiles revealed that the cultivable wild edible mushroom contains protein, carbohydrate, lipid, fiber and ash content ranged from 30.21-34.21%, 22.56-38.39%, 2.35-4.15%, 11.79-23.94% and 7.75-12.97% respectively on dry weight basis. Current study confirms that the selected cultivable wild edible mushrooms are a healthy and good source of food and major alternative source of protein. It also exposed the use of varieties of mushroom in their cultivation practice as well as diet to decrease malnutrition and increase socioeconomic values.

Compositional and nutritional studies on edible wild mushroom from northeast India
Two species of mushrooms Schizophyllum commune and Lentinus edodes from Northeast India were assessed for their nutritive value. Protein contents of S. commune (16%) and L. edodes (23%) were high, but fat content was low (2%) in both the mushrooms. Oleic and linoleic acids accounted for 72-77% of the total fat in both the mushrooms. Essential amino acid contents of S. commune and L. edodes were 34% and 39%, respectively. The chemical scores of S. commune (28) and L. edodes (29) were low compared to whole egg protein. Methionine was the limiting amino acid in both the mushrooms. Protein quality evaluation by NPR (net protein ratio), NPU (net protein utilization) and TDP (true digestibility of protein), showed that the mushrooms were comparatively much lower then casein in all the parameters examined. Animals on L. edodes showed significantly (p < 0.05) higher NPR, RNPR, and NPU than animals on the S. commune diet. True protein digestibility of the L. edodes diet was also significantly (p < 0.05) higher than the S. commune diet. 0

Background Mushrooms have been recognized both as medicine and nutritional food in many countries for thousands of years, owing to the presence of significant amounts of carbohydrates, proteins, lipids, fibers, and antioxidants. This study aims at evaluating the nutritional contents and antioxidant potentials of seven types of mushrooms cultivated in Bangladesh. Methods Proximate composition analysis of the collected mushrooms was performed to determine moisture content, pH, lipid, crude fibre, total ash, protein, carbohydrate content, and calorific value. Antioxidant potential of collected mushrooms were evaluated by mean of eight different methods including total flavonoid content, phenolic content, tannin content, total antioxidant activity, hydroxyl radical scavenging activity, DPPH assay and reducing power capacity.
