Method of preparation

  1. To prepare aam panna popsicles, start by washing and peeling the raw mangoes. Cut the mangoes into chunks and remove the seeds.
  2. In a pressure cooker, combine the mango chunks with water and sugar, and cook them till two to three whistles or until the mangoes are soft and tender.
  3. Once the mangoes are cooked, allow the mixture to cool. Then, transfer cooked mangoes to a blender along with salt, black salt, peppercorns, roasted cumin, chilli powder, and mint leaves.
  4. Blend the mixture until smooth and well combined. If desired, add a drop of green food colour for a vibrant hue (optional).
  5. Pour the blended aam panna mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each filled mold.
  6. Place the popsicle molds in the freezer and let them freeze for at least four to six hours, or until completely solid.
  7. Once the aam panna popsicles are frozen, remove them from the molds by running warm water over the outside of the molds for a few seconds. Gently pull on the sticks to release the popsicles.
