The present investigation was conducted to assess the presence of adulterants and contaminants in... more The present investigation was conducted to assess the presence of adulterants and contaminants in market milk and raw milk around Varanasi city from branded, organized dairy farms and traditional vendors. The trial work has been approved out during the period of 1 February 2019 to 20 May 2019. Four milk samples were collected from each branded, organized dairy farm and traditional vendors milk centers 250-and 500-ml. quantity was collected and decontaminated throwaway plastic bottles with screw cap and each bottle was coded. The bottles were filled in ice box and proximately ecstatic to further testing. Samples were collected randomly encompassing Varanasi city. Out of 168 th milk samples, 44.04% milk samples were found with water, 4.16% with urea, 22.02% with starch, 36.30% with sugar, 11.30% with glucose, 26.78% with salt and 7.38% with neutralizers. This study was conducted to know the extent of adulteration found in traditional vendors milk than organized dairy farm and branded milk samples. In this research, no adulteration was found in branded milk samples. But adulteration was found in traditional vendors and organized dairy farm milk samples. Branded milk was found in good quality for human health. The traditional vendors and organize dairy farm lack of suitable technical and educational information causes inferior quality of milk and indigenous milk especially in unorganized sector these are the main reasons for deterioration of milk. Also, the demand for the value-added milk is continuously increasing because of consumer awareness about health and nutrition. So, it is important to ensure the consumer about the quality, health and nutrition claims of such milk. This can be achieved by rapid analytical methods and techniques Research.

The study was conducted on 240 randomly selected poultry farmers of 16 villages in 08 tehsils of ... more The study was conducted on 240 randomly selected poultry farmers of 16 villages in 08 tehsils of 04 districts at southern region of Rajasthan to identify the socioeconomic conditions of the poultry keepers during the organic backyard / free range poultry production. The analyses of data revealed that majority 71.67% of respondents were of medium age group (30-50 years), had secondary or illiterate level (26.67% or 23.33%) of education and lived in medium sized (<5 members) joint family. Agriculture was the major occupation and 49.17% of poultry framers were small farmers (holding 1-2 ha land), with more than 6-10 years of poultry farming experience. The study revealed introduction of hybrid variety suitable for organic backyard / free range poultry farming and skill up gradation of poultry farmers can bring about a significant improvement in sustainable organic poultry production of the down trodden tribal and non-tribal communities of southern region of Rajasthan.

The present investigation was conducted to assess the effect of Shatavari root powder (Asparagus ... more The present investigation was conducted to assess the effect of Shatavari root powder (Asparagus racemosus) supplementation on milk composition of Sahiwal crossbred cows during summer season on twenty lactating Sahiwal crossbred (H.F. × Sahiwal) cows in early stage of lactation were selected for the experiment. All the cows were randomly divided into two groups T 1 (control) and T 2 (Treatment) of 10 in each group. The treatment group was provided Shatavari root powder @ 50 g/head/day for 90 days post partum. Data related to milk composition takes fortnightly interval. The overall average milk fat, Protein and Lactose percent during the experimental period in T 1 and T 2 groups were 3.77 ± 0.01, 3.84 ± 0.03, 3.43 ± 0.01 and 3.46 ± 0.01, 4.54 ± 0.06 and 4.69 ± 0.06 percent respectively, there was no significant (P<0.05) differences between T 1 and T 2 groups. The overall average solid not fat (values) and total solid (values) differed significantly (P<0.05) between T 1 and T 2 groups 8.84 ± 0.04, 9.11 ± 0.11, 12.66 ± 0.03 and 13.02 ± 0.14% in T 1 and T 2 groups was significantly (P<0.05).

In this context, there is an increasing interest in the commercial use of kefir, since it can be marketed as a natural beverage that has health promoting bacteria. There are numerous commercially available kefir based-products. Kefir may act as a matrix in the effective delivery of probiotic microorganisms in different types of products. Also, the presence of kefir's exopolysaccharides, known as kefiran, which has biological activity, certainly adds value to products. Kefiran can also be used separately in other food products and as a coating film for various food and pharmaceutical products. This article aims to update the information about kefir and its microbiological composition, biological activity of the kefir's microflora and the importance of kefiran as a beneficial health substance.

The mammary gland produces highly nutritious milk that is tailor-made nourishment for the neonatal after parturition. Other mammals, especially humans take advantage of the nutrition available in the milk. Since 3500-2800 BC milk from different animals like cow, goat, reindeer, horse buffalo and camel has been a source of nutrition for human in a different part of the world. Milk has been a symbol of purity and was often used in religious ceremonies. Healing properties of camel milk were first mentioned in the “Words of The Prophet Mohamed” in the Surah, a section of the Koran (Khan and Bukhari, 1974).
