Tempoyak adalah jenis makanan khas etnis Melayu di pulau Sumatra dan Kalimantan. Makanan ini terbuat dari durian yang sudah melalui proses fermentasi. Makanan ini biasanya dikonsumsi sebagai lauk yang biasanya dicampur dengan sambal saat menyantap nasi. Citarasa dari Tempoyak adalah asam, karena terjadinya proses fermentasi pada daging buah durian.Selain itu, tempoyak dijadikan bumbu masakan. Tempoyak dikenal di Indonesia, terutama di Sumatra Selatan, Jambi, Bengkulu, Lampung, dan Kalimantan. Sumatra Selatan terkenal dengan tempoyak campuran daging ayam, serta pindang ikan patin atau dibuat brengkes (pepes) ikan. Daerah Jambi, tempoyak lebih sering menggunakan campuran ikan patin dan ikan baung. Kemudian di Bengkulu, terkenal masakan tempoyak dengan campuran udang dengan tekstur yang sangat lembut. Sedangkan daerah Lampung, tempoyak menjadi bahan dalam hidangan seruit atau campuran untuk sambal.
