[**Tags**|agave nectar, almond flour, almonds, black beans, butter, chocolate, eggs, flour, nuts, sugar]part 1 of my grain-free birthday desserts (my birthday being tomorrow, the 14th)brownies topped with chocolate chip cookie dough:in a pot on low heat:4 ounces unsweetened baking chocolate1 cup unsalted butter1 1/2 cups agave nectar1 tablespoon vanilla extract1/4 teaspoon saltmelt and mix togetherput in a blender with:2 cups soft cooked black beansblend until smoothpour into a large bowladd 4 eggsmix wellpour into a greased 9x13 baking dishbake at 325F for 40 minutesturn off oven, leave the dish in, crack the oven door open until cooledremove dish from ovenin a large bowl:1 lb. very finely ground almond flour (do not use Bob's Red Mill brand)1/4 teaspoon salt10 tablespoons butter, melted1 tablespoon vanilla extract1/2 cup agave nectar1 cup chocolate chipswhen the brownies are completely cooled and still in the dish (uncut), very carefully "spread" the cookie dough evenly on top of them. you can't actually spread it like frosting or your brownies will come apart at the top, so you kind of have to mash it on in small portions. you should use all of the dough. cover the dish with foil or plastic wrap, refrigerate overnight, and then cut and serve. if you cut the rows 8-by-4 (32 pieces), each piece has a very generous tablespoon of agave nectar, so these should be quite sweet. | |
