Bacterial cellulose is a biopolysaccharide produced from the bacteria, Acetobacter xylinum. Static batch fermentations for bacterial cellulose production were studied in coconut and pineapple juices under 30 °C in 5-l fermenters by using three Acetobacter strains: A. xylinum TISTR 998, A. xylinum TISTR 975, and A. xylinum TISTR 893. Experiments were carried out to compare bacterial cellulose yields along with growth kinetic analysis. Results showed that A. xylinum TISTR 998 produced a bacterial cellulose yield of 553.33 g/l, while A. xylinum TISTR 893 produced 453.33 g/l and A. xylinum TISTR 975 produced 243.33 g/l. In pineapple juice, the yields for A. xylinum TISTR 893, 975, and 998 were 576.66, 546.66, and 520 g/l, respectively. The strain TISTR 998 showed the highest productivity when using coconut juice. Morphological properties of cellulose pellicles, in terms of texture and color, were also measured, and the textures were not significantly different among treatments.

The purpose of the present work was to develop a blended beverage based on green coconut (Cocos nucifera L.) water, pineapple (Ananas comosus) and acerola (Malpighia emarginata D. C.) pulps as a ready to drink product, combining the sensory acceptance, nutritional and functional compounds of these fruits. Ten formulations of mixed beverages were evaluated with regard physicochemical determinations, functional compounds and sensorial attributes. Since here was no significative change in the acceptance of here formulations, the product composed of 65% green coconut water, 15% of pineapple and 20% acerola pulp was selected based on the best combination of nutritional components. This formulation presented the required characteristics for a new commercial product.

Application of passive modified atmosphere packaging (MAP) for shelf life extension of mixed pineapple slices, mango pieces and orange segments, was evaluated. Fruits of Ananas cv 'Gold', Mango cv 'Keitt' and Orange cv 'Washington Navel' were washed, sanitized, peeled and cut. Minimal processed fruits were packed under 2 different atmospheres, passive (air) and active MAP (70% N 2 , 10 %O 2 , 20 %CO 2), and stored at 10±1 °C with 85±5% RH for 12 days. Changes in package atmosphere composition, weight loss, color, texture, pH, soluble solids, sensory attributes, were evaluated after cutting and at three subsequent stages of storage (the 3 day, 6d, 9d, and the 12 day). Color parameters L* and b* significantly decreased over time in all packaging conditions and L* variation was directly attributed to the translucency phenomenon in the fruit flesh. The pineapple and orange parameters highlighted the best visual score during the storage period, the lowest values of the browning index and the highest scores of all sensory descriptors at each sampling date. Organoleptic attributes have not been influenced by the storage time and no off-flavors were detected in the treated fruit. We conclude that pineapple slices and orange segments can be maintained in excellent condition for up 9 days at 10±1°C following the treatment with active MAP.

The objective of this work was to investigate the chemical composition, functional properties, color and antioxidant activity, total phenolic content of selected finger and pearl millet flour. Bulk density, true density of finger and pearl millet flour was found to be 0.67 gml-1, 0.55gml-1, and 1.36gml-1, 1.79gml-1. The lightness (L*) value of finger and pearl millet flour was found to be 80.73 and 80.5. Results indicated that (bulk density, true density, foaming capacity, foaming stability and lightness (L*) value of two millet flours showed a non significant difference. Antioxidant activity was measured utilizing 2, 2 diphenyl-1-1 picrylhydrazyl (DPPH) radical scavenging capacity. Antioxidant activity of extracts varied from 26.40% - 31.80%. While as total phenolic of millet flour was measured by Folin–Ciocalteu reagent, TPC of extracts was 36.96 and 44.69 (mg/100g GAE). Domestication of clonally propagated crops such as pineapple from South America was hypothesized to be a ‘one-step operation’. We sequenced the genome of Ananas comosus var. bracteatus CB5 and assembled 513 Mb into 25 chromosomes with 29,412 genes. Comparison of the genomes of CB5, F153 and MD2 elucidated the genomic basis of fiber production, color formation, sugar accumulation and fruit maturation. We also resequenced 89 Ananas genomes. Cultivars ‘Smooth Cayenne’ and ‘Queen’ exhibited ancient and recent admixture, while ‘Singapore Spanish’ supported a one-step operation of domestication. We identified 25 selective sweeps, including a strong sweep containing a pair of tandemly duplicated bromelain inhibitors. Four candidate genes for self-incompatibility were linked in F153, but were not functional in self-compatible CB5. The aim of this work was to determine the chemical, technological and in vitro antioxidant properties of co-products from the industrialisation of some tropical exotic fruits, such as mango, pineapple, guava and passion fruit, and to evaluate their potential use as dietary fibre sources for food enrichment. Proximate compositions were determined, as well as the total, insoluble and soluble fibre contents. The water holding, oil holding and swelling capacities were also determined. For the antioxidant activity, three different test systems were used (ABTS, DPPH and FRAP). The dietary fibre content of the co-products varied in a range between 69.1 and 81.5 g/100 g on a dry matter basis with a good balanced ratio between insoluble dietary fibre and soluble dietary fibre. Phenol recovery was dependent on the fruit type and the solvent system used. Methanol:acetone was a more efficient solvent for extracting phenols than ethanol. There was a good correlation between total phenol content and antioxidant capacity of the fruit extracts. All samples analysed had good antioxidant capacity. The results of this study indicate that exotic fruit fibres obtained as co-products in the process to obtain juice may be considered a good source of natural compounds with significant antioxidant activity.► Exotic fruits processing generated a great volume of co-products. ► Exotic fruits co-products are rich source of dietary fibre. ► They showed a high level of polyphenolic compounds. ► All samples analysed showed a good antioxidant capacity.

Four, male, growing Thai swamp buffaloes (197 ± 5.3 kg and all 1 year old) were used to evaluate the effects of concentrate added to pineapple waste silage in differing ratios, to form a complete diet, studying in vivo digestion, the rate of passage, microbial protein synthesis and blood metabolites. Animals were fed ad libitum with 4 diets, using four combinations of pineapple waste silage (P) and concentrate (C), in the proportions (on a dry matter basis) of 0.8:0.2 (P80:C20), 0.6:0.4 (P60:C40), 0.4:0.6 (P40:C60) and 0.2:0.8 (P20:C80). The results showed that the intakes of dry matter (DM), organic matter (OM), nitrogen (N), the N-balance, urinary purine derivatives (PD) excretion, the ratios of allantoin to creatinine (CR), PD to CR, the plasma urea-N (PUN) and insulin increased in the animals, but the intake of neutral detergent fiber (NDF), the coefficient of whole tract, apparent digestibility of NDF, the transit time (TT) and the mean retention time (TMRT) decreased, when the proportion of concentrate in the diet increased. This study indicated that the proportion of P40:C60 in the diet produced the best efficiency of urinary PD excretion (mmol) per digestible OM intake (kg DOMI).

An oral herb-based natural health product (NHP) was evaluated in the canine natural osteoarthritis model. At baseline, the peak vertical force (PVF, primary endpoint) and case-specific outcome measure of disability (CSOM) were recorded in privately-owned dogs. Dogs (16/group) were randomized to receive NHP formulations or a negative control. The PVF was measured at week (W) 4 and W8. Daily locomotor activity was recorded using accelerometer. The CSOMs were assessed bi-weekly by the owner. The NHP-treated dogs (n = 13) had higher PVF at W4 (p = 0.020) and W8 (p <0.001) when compared to baseline. The changes at W8 were higher than control dogs (n = 14, p <0.027) and consistent with Cohen's d effect size of 0.7 (95% confidence interval: 0.0-1.5). The NHP-treated dogs had higher locomotor activity at W8 (p = 0.025) when compared to baseline. No significant change was observed for the CSOM. The NHP improved the clinical signs of osteoarthritis in this model.

Two sites of agroforestry situated at Sakawrtuichhun (SKT) and Pachhunga University College (PUC) campus, Aizawl, having pineapple as the main crop, were selected for detail studies on population dynamics. Five of the total twelve species of earthworm reported from the state were recorded in the study sites. The density of earthworm ranged from 6 to 243 ind.m(-2) and biomass from 3.2 - 677.64 g.m(-2) in SKT. Many plant species grown under in vitro controlled conditions can be used as models for the study of physiological processes. Adult pineapple can display CAM physiology while in vitro it functions as a C3 plant. Ex vitro Ananas comosus has plastic morphology and physiology, both easy to modify from C3 to CAM by changing the environmental conditions. The yield of survival for a rentable propagation protocol of pineapple is closely related with the C3/CAM shift and the associated physiological characteristics. In the present work, ex vitro pineapple plants were divided in two sets and subjected to C3 and CAM-inducing environmental conditions, determined by light intensity and relative humidity, respectively, 40 μmol m(-2) s(-1)/85% and 260 μmol m(-2) s(-1)/50%. The results demonstrated that the stress imposed by the environmental conditions switched pineapple plants from C3 to CAM behavior.
