Salmon is a common food fish classified as an oily fish with a rich content of protein and omega-3 fatty acids. In Norway – a major producer of farmed and wild salmon – farmed and wild salmon differ only slightly in terms of food quality and safety, with farmed salmon having lower content of environmental contaminants, and wild salmon having higher content of omega-3 fatty acids. (en) Salmon merupakan ikan dari famili Salmonidae, salah satu jenis ikan berminyak yang hidup di Samudera Atlantik dan Samudera Pasifik. Ikan ini didapatkan dengan cara ditangkap di alam liar atau dibudidayakan. Ikan ini dijual dalam bentuk daging ikan segar, beku, maupun dikalengkan. 99 persen didapatkan dari budi daya, sedangkan 80 persen salmon pasifik didapatkan dari alam liar. Secara nutrisi, ikan ini mengandung protein dan vitamin D yang tinggi. Ikan ini juga mengandung kolesterol dengan kadar yang bervariasi antara 23–214 mg/100 g tergantung spesiesnya. Ikan salmon yang telah dimasak mengandung DHA antara 500–1500 mg dan EPA antara 300–1000 mg per 100 gram sajian. Ikan yang dibudidayakan mengandung kadar dan dengan kadar hingga 8 kali ikan salmon yang ditangkap di alam liar meski masih jauh di bawah kadar yang dikategorikan membahayakan. Meski demikian, manfaat memakan ikan salmon bagi kesehatan dikatakan jauh melebihi risikonya. Daging ikan salmon secara alami berwarna jingga kemerahan karena keberadaan pigmen karotenoid astaxanthin dan yang didapatkan ikan salmon dari krill dan zooplankton. Ikan salmon hasil budi daya tidak mendapatkan pakan alami tersebut dan dagingnya berwarna pucat, sehingga pakan ikan salmon budi daya ditambahkan pewarna identik astaxanthin (E161j) dan canthaxanthin (E161g) untuk memberi warna pada dagingnya dan menarik minat konsumen. Alternatifnya adalah dengan memberikan pakan yang sesuai seperti udang namun cukup mahal. Alternatif lainnya yaitu menggunakan ekstrak ragi merah yang memberikan pigmen yang sama. Namun asupan pigmen canthaxanthin yang berlebihan bagi manusia dapat mempengaruhi kesehatan mata. Daging salmon mentah dapat mengandung nematoda Anisakis, parasit yang mampu menyebabkan Anisakiasis.
